Freaky Friday is … I’ve made and shared a recipe from a blogger, and they’ve made a recipe from someone (a secret that I don’t know who it is yet), and they made a recipe from someone, and if you clicked through all the way around all the bloggers involved, you’d get back to my blog. I’ve participated a few times, and some great recipes have come from this event. I’ve shared Creamy Roasted Red Pepper and Feta Dip, Homemade Onion Soup Mix, Mexican Cheese Ball with Spicy Tortilla Chips, Peppermint Patties, and Homemade Baked Potato Chips.

This time around I got Christie’s blog, A Kitchen’s Adventures. Christie has been cooking since she was knee high to a grasshopper, and she brings you creative and healthy twists on the dishes she cooks. Take a look at her blog, she’s got an amazing assortment of recipes. My other top choices to make for you today were her Spinach Baked Eggs, and her Bayou Crab Chowder (which I think I’ll make as soon as I get some fresh crab).

Blue Cheese, Fig, and Caramelized Onion Palmiers

Today I chose Christie’s Blue Cheese, Fig, and Caramelized Onion Palmiers. These will be a great appetizer at any party or as a snack any day of the week. I loved the flavor of the palmiers.

All that rich blue cheese, melted into the sweet caramelized onions. I cut back on the fillings a little from Christie’s original recipe. Different ingredients will act differently in recipes. I think my fillings were a little wetter and thicker, so I didn’t want the palmiers to turn out soggy. I used my favorite blue cheese which is a little wetter, and the fig jam I found at Trader Joe’s was very thick and was actually fig butter.

Caramelizing onions

Let’s talk a little about caramelizing onions.

I like to cook mine in a saucepan on the stove.

Any onion can be caramelized – white, red, yellow. I prefer to use sweet yellow onions like Walla Walla, Vidalia, or regular sweet yellow ones.

Place the onion in a hot oiled pan and cook on medium, stirring often. Add a little water to the pan if you feel they are cooking too quickly (i.e. starting to burn). And, it’s ok if they do burn a little; the water will help disperse the browning through all of the onions, and the burned parts will literally disappear. You can also caramelize onions in the oven or in a crock pot.

Blue Cheese, Fig, and Caramelized Onion Palmiers

With just four simple ingredients, these Blue Cheese, Fig, and Caramelized Onion Palmiers will impress your guests with how fancy they are, yet you’ll know how simple they are to make

Ingredients
  

  • 1 sheet puff pastry
  • ½ cup fig preserves
  • 4 ounces blue cheese
  • ½ cup caramelized onions
  • chopped rosemary for garnish, if desired

Instructions
 

  • On a lightly floured work surface, roll out puff pastry to ¼-inch thick.
  • Spread the preserves over the puff pastry leaving ¼-inch border around the pastry. Place the onions over the preserves, and sprinkle with blue cheese.
  • Carefully roll up one long side to the center of the dough then do the same with the other long side of dough making sure they meet in the center. Refrigerate for at least 30 minutes.
  • Preheat oven to 400 ° F.
  • Slice the palmiers into ½-inch slices, and place at least one inch apart on a baking sheet lined with a Silpat or covered with parchment paper.
  • Bake at 400 ° for 12 to 20 minutes, or until the cheese is melted and the puff pastry is golden brown. Remove from heat and cool slightly before serving. Garnish with chopped rosemary, if desired.

    This is one of my favorite recipes! And you’re right about ingredients. My fig jam and onions were not very wet. I loved your banana bread!! Even the hubs agreed it was delicious.
