I mentioned the other day that I was on a fresh produce kick. I’ve also been on a bit of a mojito kick lately as well.
I think that mojitos are a great way to feature fresh seasonal produce. They’re so fun, and so fruity. I love all the colors and flavors you get with mojitos as well. The colors of this Blueberry Mojito remind me of my favorite football team. Oh, and how I can’t wait for football season to start again! Maybe I should call this a Seahawks Mojito while I wait for football. Hee hee
Since blueberry season is upon us, I thought I’d make another mojito for you: A Blueberry Mojito. Fresh, clean flavors, these Blueberry Mojitos are a great way to cool off this summer. And, hey, blueberries are really healthy, so this is a health drink, right? LOL
I’m looking forward to going fresh blueberry picking soon. Last summer we found the cutest little blueberry farm, and they had two different kinds of blueberries – Legacy, that were sweet and similar to the ones you buy in the grocery store. But, the ones that we really fell in love with were the Elliots; blueberries so full flavored and tart that we ate them by the handful! They were our treasure of the summer, and I can’t wait to be able to pick some more! They’ll be amazing in this Blueberry Mojito!
Blueberry Mojito Recipe
- ¼ cup fresh blueberries
- Small handful fresh mint leaves
- 1 lime , juiced
- 1 teaspoon sugar
- 1 ½ ounces white rum
- ¾ ounces blueberry juice
- In a mixing glass, muddle (smash) blueberries, mint, lime juice, and sugar. Add the rum and the blueberry juice to the muddled fruit. Fill a tall glass with ice and pour the mixture over the ice.
- Mix the mojito: pour the mixture back into the mixing glass, and back into the tall drinking glass. Garnish with additional mint and lime slices as desired.
