In keeping with many New Years resolutions, I’m challenging people to try a new vegetable. “Challenge 1 will be to try a new vegetable. Any veggie… One you haven’t eaten before, or one you haven’t cooked before, or one you haven’t had in a long time. Cook it up and tell me what you think of the veggie and how you prepared it.”
So, Tuesday night we had bok choy. Bok choy is a green leafy veggie that’s great in Asian dishes. It has a light flavor and adds some nice crunch. It’s really easy to prepare, and very good (despite how Tuesday’s dinner turned out).
I tried a new recipe that I would call Tofu, Bok Choy, and Broccoli in Coconut Sauce over Rice. When we ate dinner we both agreed that it was pretty good. Not great, but that it was nice and light with a good flavor. There were leftovers that we had for lunch on Wednesday. But, for some reason on Wednesday, we both decided that it really wasn’t that great, and we definitively wouldn’t make it again without many modifications. So, I’m not going to bother you with the recipe, as I don’t think I really liked the dish that much.
