Chocolate Covered Strawberry No Bake Candy Cookies

These Chocolate Covered Strawberry No Bake Candy Cookies are a fun twist on the original No Bake Chocolate Candy Cookies. With the little red chunks of sweet tart strawberry sticking out of the chocolaty oats, these were definitely a winner. And so easy to make.

Freeze dried strawberries

I buy the freeze-dried strawberries at my grocery store; they’re in the produce section there. I’ve also found them at Trader Joe’s and Sprout’s. You can also buy freeze-dried strawberries through Amazon.

How to shape these candies

I used a cookie dough scoop to scoop out the cookies onto the foil, then I flattened them a bit just using the scoop. That way they look a little more like little cookies, and are less mounded. Either way they will be delicious. You can also simply pour the mixture out onto the foil.

Chocolate Covered Strawberry No Bake Candy Cookies

Ingredients
  

  • ½ cup butter
  • 2 cups granulated sugar
  • ½ cup milk
  • ½ cup unsweetened cocoa
  • 3 cups instant oatmeal uncooked
  • 1 cup about 1.2 ounces crushed freeze-dried strawberries
  • 1 teaspoon pure vanilla extract

Instructions
 

  • In a heavy bottomed saucepan, melt the butter. Add sugar, milk, and cocoa. Bring the mixture to a boil, and let boil 2 minutes. Remove from heat. Add oatmeal, crushed strawberries, and vanilla. Stir to combine. Drop by large spoonfuls onto aluminum foil or use a cookie dough scoop to form mounds. Allow cookies to cool.
