Before I let it get too far away from me, I wanted to share my Christmas Brunch Menu for 2015. This menu would be great for any brunch celebration like Valentine’s Day, birthdays, Easter, Mother’s Day, or any special breakfast. It was simple, comforting, and delicious, and it was easy to put together for the cook (me!).
I went pretty simple & traditional this year, and we had a nice small gathering, just my mom, her husband, my husband, and me. Nice and small, quiet, cozy.
French Bread: I made it in the bread machine. I love the bread machine and use it all the time. If you have one, I totally recommend pulling it out of the closet and putting it to use. The bread always tastes great, it’s easy to make up a fresh loaf of bread, and it smells awesome while it bakes. I just used the recipe from the instruction booklet that came with the machine.
I served my favorite jam: homemade Cherry Lime Jam along with the French Bread. I was really surprised and happy to find cherries in the store right before the holiday. I also bought a jar of Blueberry Jam from Trader Joe’s. Blueberry is one of my mom’s favorites, so I thought that would be a hit. Get the recipe here.
Simple Scrambled Eggs, just scrambled in a cast iron skillet with a little oil to keep them from sticking. No milk, no cream. I added a few extra egg whites to the mix to lighten them up a bit. These were wonderful. Made me remember that I love good scrambled eggs.
Hash Potatoes, or maybe they’re called skillet potatoes or home fries. I take potatoes, preferably Yukon Gold Potatoes, but Russets or even a few white potatoes will work. This time I had a mix of golds and whites. Then, I pierce them all over with a fork, and microwave them until they are tender when pierced with a fork. Next, cut the cooked potatoes into dice, about 1/2 inch in size. In a large cast iron skillet, add some oil, and heat. Once everything is nice and hot, throw the cubed potatoes in and fry until they get crispy browned edges. Season with salt and pepper. If I make these potatoes for dinner I’ll add more spices like chili powder, cumin, or smoked paprika.
I do this method of precooking the potatoes in the microwave because I was never able to get the skillet potatoes to cook all the way through without burning them. This precooking method works great, and it’s pretty quick (as opposed to baking them in the oven which takes about an hour).
Fruit. There were strawberries, honeydew, cantaloupe, red grapes, and pineapple.
And I served dessert. Mom loves dessert, and this was a special meal, so I went with it.
Coconut Thins from Lovefoodies. These were so fun and so good! Everyone loved them. Mom took most of the uneaten ones home with her, but I did keep a few for myself. These are beautiful little lacy cookies that are super delicious! I was really impressed that they stayed crispy even days later. I like that they have coconut inside as well as a little on top. Thin little crispy cookie candy wafers of caramel goodness all topped with coconut. Get the recipe here you’ll be glad you did!
That’s it, my Christmas Breakfast Menu 2015. Like I said, simple and good. Homey. It was easy on me to make and serve everything. And, like I said, this would be a great menu for any breakfast or brunch occasion.
