Peanut Butter Parfaits

Today, we’re excited to share a recipe for a Peanut Butter Parfaits that’s both nutritious and indulgent. This treat is made with layers of creamy peanut butter, yogurt, fresh fruit, and crunchy granola, creating a heavenly combination of flavors and textures.

I first shared this recipe in 2010, but it was time for an update. I’ve updated the photos and information for a better user experience. I absolutely love this recipe. So delicious and so easy to make. I just know you’ll love it too!

What is a parfait?

At its most basic, a parfait is a sweet treat made with ingredients layered in a tall glass.

Those ingredients usually have something creamy and fruit.

And, though typically served as a dessert, a parfait makes a great breakfast or addition to brunch.

You could also use this cottage cheese chocolate pudding as a delicious high protein layer in parfaits!

Simple to make

These Peanut Butter Yogurt Parfaits are simple to make, use lots of fruit, and can be kept in the fridge ready to grab as an easy snack, breakfast, or dessert. Your kids will love them too.

Let’s get started!

In a medium bowl, combine yogurt, peanut butter, and honey. Think of this as a healthy peanut butter mousse.

Place about ½ cup of the peanut butter mixture into each of four parfait glasses or mason jars.

Top each with about ½ cup of fruit. Use strawberries, blueberries, bananas, pineapple… whatever fruit is in season and looks good!

Top with about 2 tablespoons granola. If you’re making these ahead of time, add the granola when you’re ready to serve so the granola doesn’t get soggy.

I suggest making homemade granola to use in the parfaits. I love to make granola, and I have a couple of recipes that I usually use. Also try Maple Almond Slow Cooker Granola from my cookbook, Cupboard Cooking.

Want a chocolate peanut butter parfait? Simply toss in some chocolate chips. Or drizzle melted chocolate over the top.

Besides being tasty, the parfaits are healthy too – full of protein and complex carbs.

Can I use any type of yogurt for this recipe?

Yes, you can use any type of yogurt. My favorite yogurt is a thinner European style, but feel free to use any plain yogurt you like. Thick Greek yogurt or Australian yogurt, French Yogurt, Skyr/Icelandic Yogurt, or Lactose-free Yogurt, they will all work.
 
Use vanilla yogurt if you like as well.
 
Yogurts with added fruit typically have more sugar, but can certainly be used as well. You’ll get a peanut butter and jelly kind of flavor with strawberry or blueberry yogurt.

Is this recipe vegan-friendly?

Yes, simply use a vegan yogurt. Again, go with a plain, unsweetened vanilla, or vanilla for the lowest sugar. And swap in maple syrup, golden syrup, or a liquid sweetener of your choice.

Can I use a different type of nut butter instead of peanut butter?

Certainly, use your favorite nut butter to add variety to breakfast. Pistachio butter or almond butter will be fantastic in this. Or try a nut-free Sunbutter.

Can I make this recipe ahead of time?

Yes, this is a great make ahead meal prep breakfast. I suggest tossing on the granola right before serving, otherwise the granola will soak up some of the moisture, and won’t be as crunchy.

Personally, I don’t mind it if the granola gets a bit soggy, so I go ahead and add it to the container so it’s super easy to grab and go.

How long can I store the peanut butter parfait in the fridge?

These will last, tightly covered in an airtight container, for up to 3 days in the fridge. I love making them in mason jars so they are very convenient.

Can I use frozen fruit instead of fresh fruit?

Absolutely. Simply defrost the frozen fruit before tossing it into the parfait. This will make it a really budget-friendly option as well.

Can I use store-bought granola instead of homemade granola?

Yes, it’s super easy to make with store bought granola. Look for a low sugar variety if you want.

I’m a big fan of Nature’s Path Love Crunch Dark Chocolate Peanut Butter granola or Dark Chocolate and Red Berries for these parfaits.

Though I will say that my homemade granola is so good. Low in sugar and oil. And it’s easy to make. If you want a real taste treat, try homemade.

How can I make this recipe lower in calories or sugar?

Make sure to use low fat yogurt. Or even try fat-free yogurt for fewer calories.

Use a peanut butter with no added sugar. I like MaraNatha brand; it’s also lower in sodium than most peanut butters.

And you can use a lower sugar fruit. Fruits that are lower in sugar and would be great in this recipe are raspberries, strawberries, blackberries, kiwi fruit, watermelon, cantaloupe, and peaches.
