Mojito

I would love to call this a mojito. But I know how people are with names – you have to be so precise nowadays or social media jumps all over you.

“Pineapple mojito” is a cocktail that typically includes rum, mint, lime, sugar, soda water, and pineapple juice.

Mojitos are a popular and well-known alcoholic beverage, and the addition of pineapple adds a tropical twist to the classic recipe.

Mocktail

“Pineapple mocktail,” on the other hand, refers to a non-alcoholic pineapple-based drink.

Mocktails are becoming increasingly popular, as they offer a refreshing and flavorful alternative to alcoholic beverages.

Pineapple mocktails may contain pineapple juice, soda, sparkling water, various fruit juices, and garnishes to enhance the taste and presentation.

In recent years, there has been a growing interest in mocktails due to health-conscious choices, designated driver responsibilities, and an overall shift in the drinking culture. Check out my Cherry Lime Mocktail and Ginger Mocktail for more great drinks!

Of course, you could always add a shot of rum to any mocktail drink if you really wanted to.

Mint

Besides pineapple, mint is one of the main ingredients in this little drink. I just love mint & you can check out my post that’s All About Mint!

Buying in mint grocery stores

You should be able to find fresh mint at well stocked grocery stores pretty much year-round. Typically, the mint in the stores is spearmint.

Spearmint is light-green in color with spear-shaped leaves puckery or dimpled leaves, and has that classic sweet mint flavor.

Sometimes you can find peppermint in the stores too. Peppermint leaves are darker green than spearmint and smooth. Peppermint also has a bold more potent flavor because peppermint contains menthol.

You can also look for fresh mint at Farmer’s Markets. The farmer should be able to tell you what type of mint they are selling.

What kind of mint should I use for the mocktail?

Spearmint is my first choice for this drink, and it’s the most readily available so it works out!

I grow a variety of spearmint in my garden, called mojito mint, and it’s fantastic!

You might want to try out different mints in this drink for some fun flavor differences.

How to choose mint

Look for mint leaves that are even-colored and not wilted. If you rub the leaves between your fingers, it should smell fresh and minty.

Growing mint

Mint is a perennial that grows quickly. Some might even call it a weed.

Personally, I love it. I have three different types of mint growing in my garden. It’s so fresh and nice!

Stop by your local nursery for mint plants.

How to store mint

Store it in the fridge, loose in a plastic bag, wrapped loosely in a just-damp paper towel so it won’t dry out and air can circulate. It’ll stay fresh for at least a week or even longer.

Mint can also be frozen for longer storage. Wash and dry the mint. Remove the leaves from the stems. Place the clean leaves in a ziptop freezer bag, and into the freezer for up to 3 months.

How to make the mocktail

The Pineapple Mint Mocktail is not only delicious but also visually appealing. Its vibrant yellow color from the pineapple juice, combined with the green hue of the mint leaves, makes it an eye-catching and Instagram-worthy beverage.

Gather up all your ingredients. I keep most of the ingredients in the fridge, so they’re nice and cold.

Place the mint in a glass or a cocktail shaker and muddle.

I’ve written the recipe as 1 sprig or about 10 leaves of mint. I actually like a big handful of mint for mine, but I figure that might overwhelm some people, so start with 1 sprig and work up if you want.

Muddling is a method of lightly mashing herbs and fruits in cocktails. You can use an official muddler or just a wooden spoon.

And you just need to lightly mash, don’t get out all your aggressions on the mint.

Should I muddle the mint leaves or simply add them to the mocktail?

I’ve found that the flavor is best when the mint is muddled. Muddling releases the oils and the minty-ness!

Of course, there have been times where (when I’m feeling lazy) I just toss the mint spring in the glass. That’s super easy to do too!

What type of glassware should I use to serve this?

I like a large pint glass or an Imperial pint glass for this drink.

You could also make a larger pitcher of the drink and serve it in smaller glasses like stemless wine glasses.

Continue mixing the drink

Add the juice of 1 lime. And freshly squeezed lime juice should be used here.

Can I substitute lime juice with lemon juice?

I like this drink best with lime juice. It’s a little extra tart bitterness from the lime that balances the sweetness of the pineapple juice.

But if you have a lemon and no limes, of course you could make that substitution.

Continue with the mixology

Now you’ll add the pineapple juice, vanilla syrup, and the Seedlip Garden.

What is Seedlip?

Seedlip is a premium non-alcoholic spirit. I really like the garden flavors – light herbal botanicals. It blends thyme and rosemary with a nice herbal base character of spearmint and hops.

It is on the pricier side. So, if you don’t have any, or don’t want to buy any, just leave it out of the mocktail.

But, if you have a few extra dollars to spend, give it a try. I really like it.

Serving

Serve the drink in a large glass, either straight up or over ice – your choice. I prefer mine straight up.

Fill the rest of the glass with sparkling water or club soda. This adds a delightful bubbly texture and enhances the overall experience. Pineapple flavored sparkling water is my favorite. Lime and plain would be my next choices.

Don’t forget to garnish your Pineapple Mint Mocktail! Add a lime wheel and sprig of fresh mint to the rim of the glass. These little finishing touches not only add visual appeal but also contribute to the overall flavor and presentation.

Can I prepare the Pineapple Mint Mocktail in advance for a party?

This great drink can absolutely be made ahead of time.

You can even make a large batch of the mocktail and store it in the refrigerator in a pitcher. Simply use the servings slider on the recipe card to increase the amounts.

Are there any variations I can add to personalize the mocktail?

Oh, I love how creative my readers are with recipes, and especially drink recipes are great to try and make your own.

Add a splash of coconut water or coconut milk for a tropical twist. I served these recently with a scoop of coconut sorbet, like a float, and they were delicious!

Make a non-mint version of the mocktail for those who don’t enjoy mint flavors. I love basil in drinks. Check out my basil syrup and there’s a recipe for a Strawberry Basil Lemonade there. Or, just leave the herbs out if you prefer.

Turn this mocktail into a cocktail by adding a shot of rum, vodka, or even sparkling wine.

Use regular vanilla syrup, homemade vanilla syrup, or even sugar free vanilla syrup. You could also use a sweetener alternative like honey or agave syrup instead of vanilla syrup.

Adjust the sweetness or tartness of the mocktail to suit your taste by adding more or less syrup or lime juice as well.

Get creative! You can experiment with other ingredients like ginger, grilled pineapple pieces, or other flavored homemade syrups to give the mocktail your own unique twist.

Can I use canned, fresh, or frozen pineapple juice?

Yes, all of these will work. I love the convenience of those small cans of pineapple juice. They are perfect for this drink. No need to measure, they taste delicious, and they last a long time in the fridge.
