Super Bowl 2014 Menu
Ok, first off, MY TEAM WON THE SUPER BOWL! MY TEAM WON! I LOVE THE SEAHAWKS! Whew! Now that I got that off my chest, I feel like I can talk about my Super Bowl 2014 Menu.
When the NFL Playoffs began we decided that if the Seahawks made it to the Super Bowl we would NOT have a party. We wanted to be able to watch the game, the whole game, and nothing but the game. I love having a big football party, but, come on, you don’t really get to watch the game at all.
Just because we didn’t have people over doesn’t mean that we couldn’t have all the yummy food, snacks, and nibbles! So, here’s my lineup of football snacks this year. And, well, I didn’t take too many pictures because I was busy watching the game.
Most of these nibbles I made the day before so they were all ready to go in the fridge. Always a plus!
- Mexican Spiced Ranch Dip with fresh veggies (baby carrots, green beans, zucchini sticks, and broccoli). Inspired by Flavor Mosaic. I like the fresh flavors that the cilantro and tomatillo salsa added to regular ranch dip. The tomatillo salsa I used was homemade and previously frozen. I knew it would come in handy, so I stored some in the freezer. Using homemade always tastes great, and if it’s as easy as going to your freezer to get it, count me in!
- I thought the Mexican Ranch Dip was excellent drizzled on this Veggie Taco Dip from Hidden Fruits and Veggies. Sorry I didn’t get a picture of this baked awesomeness, but we devoured it quickly! I really didn’t make any changes to the recipe. I used homemade salsa (recipe follows), and homemade taco seasoning. I definitely recommend baking it in the oven! The hot creamy dip was simply perfect.
- Homemade Salsa with chips. I like this salsa, and have made it a couple times. It’s great for when the tomatoes aren’t in season. I made it pretty mild, but you can totally up the heat by throwing in a whole Serrano chile or two.
- We ended the night with some awesome Grilled Cheese Roll-Ups from ChinDeep. Seriously, these were da bomb! I think any kid (or kid at heart) would LOVE these. Simple and fun. We didn’t even need any sauce to dip them in. And, super easy!
Ok, maybe it wasn’t the healthiest low-cal spread you’ve ever seen, but it certainly was tasty. And, the Super Bowl only happens once a year. So, go ahead, live a little! Besides, I think we did enough yelling, clapping, and cheering to burn off most of those extra calories!
- Mexican Tortilla Roll-Ups. Inspired by a few different recipes that I saw on Pinterest. I served them with Homemade Enchilada Sauce.
Mexican Tortilla Roll-ups Recipe
Mexican Tortilla Roll-Ups
- 1 package 8 ounces cream cheese
- 3/4 cup shredded Mexican cheese blend
- 1/4 teaspoon powdered garlic
- 2-3 teaspoons chili powder
- 1 teaspoon cumin
- 2 green onions finely chopped
- 1 can 10 ounce Ro-tel, drained
- 1 can 4 ounce diced green chiles
- 1/4 teaspoon salt
- Small handful cilantro chopped
- 4 ounces queso fresco crumbled
- 3 Sun-dried tomato basil wraps or large flour tortillas
- Enchilada sauce for serving
- Mix all ingredients except queso fresco and tortillas together. Cover and refrigerate for at least 1 hour. Spread 3-4 heaping spoonfuls of filing on each tortilla to cover the tortilla. Sprinkle with queso fresco. Roll up and cut into slices about 1-inch thick. Serve cold.
- Serve with enchilada sauce for dipping.

Mexican Spiced Ranch Dip Recipe
Mexican Spiced Ranch Dip
- ⅓ cup Tomatillo Salsa
- ½ cup fresh cilantro stems included, roughly chopped
- 1/4 teaspoon powdered garlic
- 1 container 16 ounce sour cream
- 1 package 1 ounce ranch dressing mix
- Place the Tomatillo Salsa, cilantro, and powdered garlic in a food processor. Pulse until smooth. Add the sour cream and ranch dressing mix and pulse again, until smooth and creamy.
- Refrigerate for 1-2 hours to allow for the flavors to get to know each other.

Homemade Quick and Easy Salsa Recipe
Homemade Quick & Easy Salsa
- 1 can 14 ounce diced fire roasted tomatoes
- 1 can 10 ounce mild Ro-tel
- 1/2 small onion roughly chopped
- 1 Serrano Chile veins and seeds removed
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- small to medium size handful of cilantro washed
- Put all the ingredients in a food processor, and pulse until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste.
