Super Bowl Menu 2015
With the Super Bowl coming up we spent some time thinking about the menu. And, just like last year, my team will be playing in the Big Game! #GoHawks So, that means we are staying home and watching the game alone.
No big party, because we want to be able to watch the game and not host. But, that doesn’t mean there won’t be a big spread of food! No sir-ee-bob! We will have enough food to feed a whole party! And, here’s what we decided to make for this year!
Sushi with Buf-a-que Shrimp. We’ll make this on Saturday and keep it all in the fridge ready to go for Sunday. I have some of the instructions here on how we do sushi.
Chili bar with nacho cheese, and all the toppings (like tortilla chips, green onions, shredded cheese, cilantro, and salsa). I like making chili in the crock pot, and this is a super easy recipe. I’ll be cutting the recipe in half because it’s just the two of us. But, besides just having a bowl of chili with yummy toppings, you can make nachos topped with chili, so it’s a nice hearty dish.
Baked Mexican Stuffed Mini Potatoes. These are one of my favorite snacks/appetizers. I’ll make them up the day before, by baking the mini potatoes, stuffing them, and putting them in the fridge. Then, on Sunday, I’ll bake them so they’re nice and hot! and I’ll have lots of Easy Enchilada Sauce on hand to douse them with.
Sun Dried Tomato Dip and I have some Balsamic Roasted Tomatoes with Onions in the freezer that I’ll use in the dip this time.
Veggies and Ranch… gotta have some veggies!
Crispy Pizza Wraps from The Cooking Actress. I’ll use our house Pizza Sauce in them, and leave the pepperoni out for me.
Peruvian Green Sauce. Hot hot hot. But so tasty on bread, crackers, and it’s awesome on nachos!
I’m so excited and a bit nervous for the Super Bowl! I hope it’s a good game! What are you doing for Super Bowl this year?

One thing is for certain-I will NOT be watching any football games! Generally I end up going out with my Mom on Superbowl Sunday–have been doing this for years!! My Dad when he was alive was a big sports fan-we would leave him alone or with some of his friends.
