I’m very excited to announce that I’ll be working with The Purple Carrot.
In case you aren’t familiar with them, The Purple Carrot provides “All the raw, pre-measured ingredients and recipes you need to cook healthy, delicious plant-based meals and snacks at home … delivered.” It’s one of those cool box services! And I love that it’s all plant-based (vegetarian, vegan). The box gives you two 100% plant-based meals and one healthy snack, with fresh, local, organic and non-GMO products each week. And I love that you get some choice in the menu. You know, in case you have a picky eater in the house!

I think this would make a great gift for a kid leaving home to go to college, or for a wedding gift. The box provides all the ingredients needed, so it’s great for those just starting out who may not have much of a pantry supply. Also, it’s great for those just learning to cook, or for those who are interested in trying vegetarian cooking, but may not know where to start. I would’ve loved to start learning about vegetarianism with a box like this each week! I think the variety and the flavors are wonderful. And, they teach basic cooking skills, which is awesome.
Back when I first became veggie I had lots of research to do, and although there were a couple of veggie magazines, it was still a bit of work to find good recipes. And, yes, I had to walk uphill both ways in the snow to get to my one room school-house. hee hee But, a box with new recipes each week would’ve been a great way to try new things.
The Purple Carrot sent me a box to try, and it was great! There were 3 recipes: One Pan Mexican Fiesta, Lemon Asparagus Risotto, and Maple Chia Pudding.
The One Pan Mexican Fiesta (pictured at the top of this post) was totally something I would make over and over again! It was easy, delicious, and exactly something that a Mexican food fan like me would devour! And, it only took 30 minutes to make (a total plus!), so dinner or lunches could be made quickly! I’ve been eating the leftovers of this Mexican Fiesta on top of a big salad, and it’s great that way too!
The snack in my box was Maple Chia Pudding. I can’t say enough how delicious and great this one was! I’ve seen chia pudding recipes, but I wasn’t sure if I’d like them, so I never wanted to invest in a whole big package of chia seeds, just in case I didn’t like it. Well, since this box included the chia seeds as well as cocoa nibs, I didn’t have to buy those expensive ingredients and watch them go bad in big packages. Both of these items may be too experimental or too expensive to buy a whole big box of the ingredients if you aren’t sure that you’re going to like them. So, this was a wonderful way to try new and different foods. And, the added plus is that now I know I like these, so I can buy and make this again and again!
Lemon Asparagus Risotto was the other main dish in the box. I decided to make the recipe just as it was so that I could see what it’s like. Now, for me, I’m not a big fan of lemon in savory dishes. So, I liked this risotto, but in the future, I’d leave the lemon out. I know many people like savory lemon, it’s just not my cup of tea. But, I was super impressed that the recipe included nutritional yeast flakes, again that whole investing money in something you may not be sure about, the box gives you the option to try new stuff without much risk.
The Purple Carrot addresses one of the issues that might come up about a box delivery service like this. They say that the vast majority of their packaging is reusable, recyclable, biodegradable, or compostable.
