A short post today. I forgot to take any pictures yesterday. And, I’m trying to finalize all the pictures for the cookbook. I only have a few more photos to go, and then I’m done taking pictures! Then, off to the editors. Yippie!!
breakfast: coffee, pineapple, and vanilla yogurt
lunch: leftover vegetarian picantes
snack: green sauce with bread and butter
dinner: I gave Dan a choice of what he wanted, and he asked for breakfast for dinner. So, I took some leftover baked potatoes, sliced them, and fried them to make home-style potatoes. We had OJ, toast, and scrambled eggs. After Dan started eating the eggs, he turned to me and asked, “is it just me, or these eggs really good?” They were really good. I think they were so much better than usual because they were organic free roaming chicken’s eggs.
I’ve recently been doing some research into eggs, and found some interesting info. Here’s a link to see exactly what those terms on the labels mean. So, we decided to invest a little extra money into the eggs, and you know, I think it’s totally worth it.
