As part of Unprocessed October, I’m going to try to post each day’s meals. Maybe this is partly to keep me honest. Maybe this is partly to let everyone know how easy (or difficult) this will be. I’m trying to be realistic, and I know that I may not post every day or I may forget to take pictures. So, for now, here’s day 1 of trying to eat no processed foods for a month. Also, I decided that this challenge did not include trying to be wasteful, so if it’s processed, and already in the house (and could spoil), it can be included in the meals.
Breakfast: cantaloupe and boiled egg whites.
Lunch: grilled corn on the cob, green beans, egg whites, and brown rice.
Dinner: homemade sourdough bread with crock pot minestrone (a recipe from Cupboard Cooking).
