This is a “use it or lose it week” in my house. Which means that I’m not cookin’ up much new stuff, just using whatever’s in there.
This was my lunch today, Roasted Red Pepper Hummus Sammie on Onion Roll with a Fried Egg & Avocado. It was as good as it was messy!
I always have the makings for hummus on hand, so that part was easy. I added a roasted Anaheim chile to the hummus for a tiny bit of spice. The sammie is on an onion hamburger bun. I had red onion, lettuce, and red pepper in the ‘fridge, so I threw those on the sandwich as well. I Sprinkled a little salt and pepper on the egg, and was ready to chow down. If you make one of these for yourself, make sure you have a napkin handy!
Part of the reason we are having a “use it or lose it” week is because we are going to a very special wedding this weekend. I made a card for the bride and groom (I hope they don’t see this post before the wedding).

Traditionally, the St. Brigid Cross is made of straw. But, I thought it would be beautiful in white on white card for the wedding card. Want to make one of your own? Here are some great instructions, just be sure to fold all but one of the strips before you start weaving them together.
