So, my team didn’t make it to the Super Bowl this year. Sigh. Well, I didn’t really think they would, what with a new coach and an injured QB. But, at least they made it to the playoffs! And, they kicked some booty on the Saints!
So I guess I’ll root for another team. Or, maybe I’ll just root for the food! And, in preparation for Sunday, I’m trying to eat really healthy stuff all week so that I can pig out on everything on Sunday. “Everything in moderation, including moderation!”
What’s on the menu for this Sunday? Well, it still might change a bit, but here’s my tentative menu…
Peruvian green aji sauce with French bread
Hot baked artichoke dip with crackers and pita chips
Veggies and ranch
Chips and salsa
Cheese nibbles dipped in herbs and spices (cut any kind of cheese into cubes and roll the edges in your choice of herbs and spices)
Meatballs in a sweet and savory chili sauce
Honey roasted pecans
A guest is bringing oysters with water chestnuts wrapped in bacon (wow!)
Carne asada tacos with guacamole, shredded cabbage, white onions, and cilantro
maybe chili as well?
Mint chocolate chip ice cream (homemade!)
Carrot cake (we have a birthday girl at the party.. shhh, don’t tell her I’m baking a cake)
Pretzels and dried fruit covered in dark chocolate
