Witches Brooms Recipe

Halloween puff pastry Witches Brooms Recipe are so adorable and really easy to create this impressive looking spooky snack. And with just two delicious ingredients, plus the pretzel sticks, everyone will love these Halloween treats!

These sweet bewitching cookies are really easy to make and fun to eat!

These are easier than you think. Don’t get bogged down in the details or worrying if your lines are straight. They will come out great, even if you don’t have perfect measurements or straight lines.

Which also makes these perfect for the kids to help make them. If the kids are really small, then let the adults do the cutting, but older kids will enjoy cutting out the dough too.

Halloween Party food

Serve these at any Halloween party or potluck. They make great Halloween finger foods.

They’re also great at a Harry Potter Themed party. And be sure to serve up some Spider Cookies, wizard wands and Breadstick Snakes.

Serve up some delicious themed desserts along with my Skull Cakes.

 Or a Hocus Pocus party for some fun witch themed food.

How to make these

Be sure to scroll down to the printable recipe card for ingredient amounts. And, you’ll find the video there for a quick tutorial and visual instructions.

But like I said, don’t worry if your lines aren’t straight or if you’re measurements aren’t perfect. These are very easy to make and forgiving.

Line two cookie sheets with parchment paper. Set aside.

Roll out puff pastry and lightly flatten with a rolling pin. 

Cut the dough into 12 pieces measuring about 2 & ¾ by 3-inches. I found that a pizza cutting wheel was a great tool for cutting the squares and the broom.

How many squares of dough you get will depend on how large the puff pastry is. You may get more or less squares. You just want to make sure you have an even number of squares.

And, if you have leftover scrap pieces of dough, you can spread Nutella on them and bake them up too! Good nibbles!

Place a teaspoon full of Nutella on only half of the squares and spread evenly, cover each piece with the remaining squares, turn them vertically and make thin slits in the dough, leave approximately ¼ to 1/3-inch boarder on the top.

Wrap the dough around the end of a pretzel stick, and place on prepared cookie sheet. Gently spread the slits.

Brush milk over the puff pastry. Sprinkle with sugar and bake for approximately 15 – 20 minutes. 

Let cool completely before serving.

Can they be made ahead?

They can be made ahead. Keep them in an airtight container on the counter for a day or two. The puff pastry might not be as crispy, but it will still taste great.

Puff pastry

Store bought puff pastry is great have on hand. I love having Puff pastry recipes in my back pocket for when I need something special. Here are some more easy puff pastry recipes: Lemon Puff Pastry Sticks and Blueberry Breakfast Pastry.

The three main brands I see at the store are all good quality, and I recommend all of them: Dufour, Pepperidge Farm, and Wewalka.

These brands come in different sizes, but for these Witches’ Broomsticks you can use any of the three with no problems. You may need a little more or a little less Nutella for the filling, but that’s easily adjusted.

How to defrost puff pastry

The secret to making puff pastry look and taste as good as it does from a bakery is properly thawing it.

Thawing time may vary, but you’ll be able to tell if the puff pastry is thawed if it’s easy to unfold, and doesn’t tear.

It should still be cold. If the sheets reach room temperature, return them to the fridge to re-chill (but not refreeze).

The best way to defrost is in the fridge

Frozen puff pastry sheets will take about six to eight hours to thaw in the fridge.

You can pop the whole box in the fridge the night before you want to use it. It’ll defrost nice and slowly.

Room temperature

For even faster thawing, you can thaw it at room temperature.

To do so, remove the pastry sheets from the box and any outer wrapping. Place the sheets on the counter for about 40 minutes, or until the pastry unfolds easily.

You don’t want the dough to get too soft, just pliable enough that you can unfold it without tearing.

Microwave

If you totally forgot to thaw the puff pastry and need it right away, you can thaw it in the microwave, just be careful with this method, as you don’t want to melt the butter in the pastry. I’m not a big fan of this method, and would recommend thawing at room temperature. But, just so you know, it is an option.

As a reminder, microwaves vary in power and efficiency.

Remove one pastry sheet from the box and any outer wrapping, wrap it in a paper towel, and microwave on high for 15 seconds.

Turn the pastry sheet over, and microwave another 15 seconds.

If pastry doesn’t unfold easily, microwave for another 5 seconds on each side.

Ingredients
  

  • 17.3 ounces puff pastry defrosted
  • ¼ cup Nutella more or less as needed
  • 12 pretzel sticks
  • 2 tablespoons milk for brushing
  • 2 tablespoons sugar in the raw

Instructions
 

  • Pre-heat oven to 350° F. Line two cookie sheets with parchment paper. Set aside.
  • Roll out puff pastry and lightly flatten with a rolling pin. Cut the dough into 12 pieces measuring about 2 & ¾ by 3-inches.
  • Place a teaspoon full of Nutella on only 6 of the pieces and spread evenly, cover each piece with the remaining 6 pieces, turn them vertically and make thin slits in the dough, leave approximately ¼ to 1/3-inch boarder on the top.
  • Gently wrap the dough around the end of pretzel stick, and place on prepared cookie sheet. Gently spread the slits.
  • Brush milk over the puff pastry. Sprinkle with sugar and bake for approximately 15 – 20 minutes.
  • Let cool completely before serving.

    Fay, any nut butter will work (peanut butter, almond butter, pistachio butter). Pistachio butter has a green color that may look super creepy. Melted chocolate will also work. Happy Halloween!

    Polly, they can be made ahead. Keep them in an airtight container on the counter for a day or two. It might not be as crispy, but it will still taste great.
