Open Faced Avocado-Miso Toasts with a Fried Egg

Ingredients

  • Handful of fresh spinach leaves
  • 2 slices whole grain bread toasted
  • 1 large avocado
  • 1 tablespoon white miso paste
  • pinch Kosher salt
  • freshly ground black pepper
  • 2 fried eggs

Instructions

  1. Lay fresh spinach leaves on the toast. In a small bowl, mash the avocado and miso together with a fork, and spread on toast. Sprinkle salt and pepper over the avocado mash.


  2. Fry the egg to your liking, and top the avocado toast with the fried egg. Devour.
