Spray a 9x13-inch baking pan with cooking spray. Place frozen rolls in pan, and cover with plastic wrap that’s been sprayed with cooking spray to keep it from sticking to the rolls while rising.
Let rise 2-3 hours, or until rolls double in size. If your kitchen is cold, the rising time may take longer. Carefully remove plastic wrap.
Lightly flour your counter top surface and a rolling pin.
Take 3 dough balls and roll them into one large ball, then flatten into a disc. Roll the dough disc out to the size of the waffle maker, the dough should slightly overhang the edges of the waffle iron.
Repeat making 4 large discs of dough. Place the large discs of dough on a plate, and separate the discs with parchment paper or waxed paper.
Preheat the Nordic Ware Sweetheart Waffle Iron over medium heat, about 2 minutes each side.
Carefully place one disc of dough on one side of the waffle iron. Top with 2 tablespoons of pizza sauce, spreading the sauce almost to the edges of the waffle iron, but not touching the edges. Sprinkle with scant ½ cup shredded mozzarella, 1 tablespoon each of the red onion and red pepper. Top with another disc of dough.
Close the waffle iron down on top of the filled pizza, and carefully trip off the excess dough using a knife.
Any excess dough that doesn’t get trimmed off will burn a little. It’s no big deal, just break those pieces off after cooking if you want.
Place the waffle iron over medium-high heat, and cook 3-4 minutes, or until the dough is golden brown on the bottom side. (We had no problem opening the waffle iron during cooking.) Flip the waffle iron and continue cooking another 3-4 minutes until it’s golden brown.
Carefully flip cooked waffle iron pizza out of the waffle maker.
Make the second waffle iron pizza in the same manner as the first.
