For cookies:

  1. Preheat oven to 350° Line baking sheets with parchment paper or silpat mats.
  2. Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
  3. Beat sugar and butter in large mixer bowl until well blended using a hand mixer, stand mixer or sturdy fork. Beat in pumpkin, egg, and vanilla extract until smooth. Gradually beat in flour mixture.
  4. Drop dough by rounded tablespoon onto prepared baking sheets.
  5. Bake for 15 to 18 minutes or until edges are firm and cookies are slightly golden in color.
  6. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

For Glaze:

  1. Combine powdered sugar, milk, melted butter, and vanilla extract in small bowl until smooth. Drizzle or spoon glaze over cookies.
