  • 1 cup cabbage slaw mix
  • 2 green onions white and green portion, chopped
  • ¼ cup finely chopped red bell pepper
  • 4 tablespoons roasted flaxseed
  • 1 teaspoon reduced sodium soy sauce
  • ½ teaspoon red pepper flakes
  • 4 egg roll wrappers each about 6 ½ – inches square
  • 1 large egg white
  • 1 teaspoon water
  • 1 teaspoon cornstarch

  1. Preheat the air fryer, with the air fryer basket in place, to 400° F.
  2. In a medium bowl, combine the slaw mix, green onions, red bell pepper, flaxseed, soy sauce, and red pepper flakes for the filling.
  3. In a small bowl, whisk together the egg white, water, and cornstarch.
  4. Place about ¼ cup filling on each egg roll wrapper. Brush some of the egg white mixture on the edges of the egg roll wrapper. Roll up the egg roll, folding in the sides so that the filling is contained. Brush the egg white mixture on the outside of each egg roll.
  5. Place the egg rolls in the air fryer basket in a single layer. Air Fry for 8-10 minutes, filling halfway through, or until brown and crispy. Serve warm with dipping sauce if desired.
