On a lightly floured work surface, roll out puff pastry to ¼-inch thick.
Spread the preserves over the puff pastry leaving ¼-inch border around the pastry. Place the onions over the preserves, and sprinkle with blue cheese.
Carefully roll up one long side to the center of the dough then do the same with the other long side of dough making sure they meet in the center. Refrigerate for at least 30 minutes.
Preheat oven to 400 ° F.
Slice the palmiers into ½-inch slices, and place at least one inch apart on a baking sheet lined with a Silpat or covered with parchment paper.
Bake at 400 ° for 12 to 20 minutes, or until the cheese is melted and the puff pastry is golden brown. Remove from heat and cool slightly before serving. Garnish with chopped rosemary, if desired.
