Place apple chunks in crock pot, and sprinkle brown sugar and cinnamon over the top. Cover and cook on high for 4 ½ hours, stirring occasionally.
After 4 ½ hours, remove lid, and stir. Continue cooking for 1 hour, uncovered.
Allow apple butter to cool slightly. For a chunky apple butter, it’s done. For a smooth apple butter, transfer to a blender and puree until smooth, or use an immersion blender.
Transfer apple butter to airtight containers, and store in refrigerator for up to two weeks or store in the freezer for up to 2 months.
