plain or vanilla Greek yogurt

peppermint extract
Instructions
Preheat oven to 400° F. Line muffin cups with muffin liners, and spray the muffin liners with non-stick cooking spray.
In a medium bowl, mix flour, white sugar, salt, and baking powder together with a whisk until incorporated.
In a separate large bowl, add oil, 2 eggs, and Greek yogurt and whisk to combine.
Add the flour mixture to the liquid mixture and mix, until just combined. Be careful not to over mix, or the batter will toughen.
Fold the chocolate chips and peppermint extract into the batter.
Using a cookie dough scoop, fill the lined muffin cups about 3/4 full.
Bake until a toothpick inserted in the center of the muffin comes out clean, about 20 minutes.
