Blackened Shrimp Pasta - Cajun shrimp over a creamy cheese sauce – it doesn’t have to be Mardi Gras to enjoy this easy to make pasta dish. It’s perfect for a quick and easy weeknight meal.
Cook pasta in a large pot of boiling salted water according to package directions, until al dente.
While the pasta cooks, heat the olive oil in a medium non stick sauce pan over medium heat. Once the oil is hot, add the Blackened Seasoning. Add the shrimp to the pan with the seasoning, stirring to make sure the shrimp are covered in the seasoning. Cook the shrimp for about 2-3 minutes, until pink and cooked through. Using tongs, remove the shrimp from the pan, and set aside.
Without wiping the pan out, add the green onions to the leftover oil and seasonings in the pan. Cook for a minute, until fragrant.
Pour the cream into the skillet, and cook over medium heat, stirring constantly until just boiling. Lower the heat, and simmer for 8 minutes, or until the cream is thickened.
Remove the sauce from the heat, and stir in cheese, blending well.
Drain pasta, and put the cooked pasta back in the large pot, pour in the cream sauce, and toss the pasta in the sauce to coat.
Plate the pasta and sauce, and place some shrimp on each serving. Garnish with additional chopped green onions and a sprinkle of Cajun seasoning if desired.
