Air fryer sweet potatoes are delicious and super simple to make. I tossed in some cranberries and red onion for a festive touch, and these cubes of earthy potatoes are a great accompaniment to any meal from breakfast to dinner. This is a side dish that takes very little effort to make yet yields amazing results - tender and creamy on the inside with crispy outsides.
Cut sweet potato into bite sized pieces, about ½ to 1-inch in size. You want your sweet potato chunks to be roughly uniform in size so they all cook at about the same rate.
Place the sweet potato pieces in a mixing bowl, along with the oil, cinnamon, chili powder, salt, cranberries and red onion, and toss to coat.
Transfer veggie mixture to the air fryer basket, and cook until or until crisp and browned outside and just tender inside, about 20 minutes. Shake the basket a few times to rearrange the sweet potatoes, or use a spatula to flip them. Use your own judgment, cooking longer or shorter, if needed, keeping an eye on the sweet potatoes to make sure they don't burn.
