Cut the skin off of the cod, if there is any. Pat the fish dry with paper towels, and cut into bite sized pieces, about 1 to 2 inches.
12 to 16 ounces cod
Mix the soy sauce and vinegar together in a bowl. Add in the fish pieces, and toss to coat. Let marinate, covered in the fridge for 30 minutes. It can marinate up to an hour long.
¼ cup soy sauce, 2 tablespoons seasoned rice vinegar
Drain and discard the marinade. Pat the fish dry with a paper towel.
Preheat the air fryer to 380° F.
Mix the sesame seeds with the pepper, and the salt if you’re using.
¼ cup sesame seeds, ¼ teaspoon freshly cracked black pepper, Salt to taste
Add the sesame oil to the marinated fish and toss to coat.
1 tablespoon sesame oil
Using tongs, dip each piece of fish into the seed mixture. You can coat all sides, or just to one side for an elegant presentation.
Using the tongs, place the bites in a single layer in the air fryer. Don’t crowd the pan; you can cook in two batches if necessary.
Air fry at 380° F for 5-7 minutes.
Sprinkle the cooked cod bites with chopped green onion for serving.
