Animal Cracker Sandwich Cookies

Ingredients
Frosting:
- 4 cups powdered sugar plus additional as desired
- ¾ cup shortening
- 1 unbeaten egg
- 1/3 cup water
- 1 teaspoon almond extract
- food coloring as desired
For sandwich cookies:
- Animal Crackers
Instructions
- Mix all frosting ingredients thoroughly with an electric mixer. Add more powdered sugar as needed until you reach the desired consistency.
- Spread frosting between two animal cookies to create a sandwich. Wrap each Animal Cracker Sandwich Cookie individually in plastic wrap, and store cookie sandwiches in the fridge.
