Preheat oven to 400° F. Spray a 12-count muffin tin with cooking spray or line with paper liners and spray the inside of the liners with cooking spray, and set aside.
In a large bowl, combine flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
In a separate bowl, whisk together the egg, almond milk, oil, and vanilla.
Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chopped apple, and divide evenly between the 12 muffin cups.
Sprinkle about 1 teaspoon of old-fashioned oats over the top of each muffin. Bake for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.

I like to use muffin cups for all my muffins, and I like to spray the inside of the cups with non-stick or oil spray so the muffin doesn’t stick to the cup.These muffins also freeze and reheat well. When you’re ready to defrost them, thaw the muffins at room temperature, or place frozen muffins in the fridge the night before you want to eat them. Or heat the frozen muffins in a 350° F oven for about 10-15 minutes.
