Cottage Cheese Avocado Toast is a great way to start the day. With a boost of protein, healthy fats, and fiber, it's easy to make, filling, and a healthy breakfast with simple ingredients. You may need a little more or less or the oil and the cottage cheese depending on how large the bread slices are.

Instructions
Place the bread slices on a work surface. Brush the bread with the olive oil, covering the surface of the bread with a light layer of oil.
Heat a grill pan or a skillet over medium-high heat. Once hot, place the bread oiled side down, in the skillet and toast until golden brown. Once the bread is toasted to your liking, remove it from the pan and place on serving plates.
While the bread toasts, slice the tomato. Halve the avocado, remove the pit, cut into slices, and peel them.
Spread or dollop the cottage cheese over the grilled side of each piece of toast. Place the avocado slices on top of the cottage cheese, then top with tomato slices. Sprinkle sprouts, salt, and pepper on the top. Serve right away.

You may need a little more or less or the oil and the cottage cheese depending on how large the bread slices are. I’ve found that the easiest way to peel avocados for slices like these is to cut the avocado in half, revealing the pit. Remove the pit by placing the avocado on a cutting board work surface, move your hands away, and with a sturdy sharp knife give the pit a thwack. The knife should be stuck in the pit just a bit. Give the pit a twist and remove it from the avocado. Slice the avocado into thin slices. Now peel away the skin. You should have pretty slices.This meal should be made and enjoyed right away. I don’t recommend storing it. The avocado will turn brown and the cottage cheese will make the toast soggy.
