Cottage Cheese Oatmeal Cookies are a nourishing cross between the classic oatmeal cookie and the new cottage cheese cookie sensation. They’re perfect for a quick snack, a healthy dessert, or a grab and go breakfast. Plus, they’re really easy to make.
¼cupchocolate chipsraisins, or chopped nuts, optional
Instructions
Preheat the oven to 350° F and line two baking sheets with parchment paper.
In a mixing bowl, combine the cottage cheese, rolled oats, brown sugar, flour, baking soda, and vanilla. Mix until well combined.
Fold in the chocolate chips, raisins, and nuts if using.
Scoop dough into large spoonfuls onto the prepared baking sheet, spacing them about 2 inches apart, they spread a little bit, but not too much.
Bake for 10-12 minutes, until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
These cookies can be stored in an airtight container and kept on the counter at room temperature for up to 3 days. For longer storage, place them in the fridge for about a week. They can also be stored in the freezer in a freezer safe bag for up to 3 months. Thaw them on the counter before enjoying.Either dark or light brown sugar will work in in this recipe. Dark will have a little deeper flavor.
