Beautifully rich and savory French Onion Gnocchi where caramelized onions meet melted Gruyère cheese with pillowy soft gnocchi in this cozy skillet dinner. And it all starts with the convenience of store-bought gnocchi.
2large yellow onionshalved and thinly sliced (about 2 cups)
½teaspoonKosher salt
¼teaspoonblack pepper
¼teaspoongarlic powder
1cupvegetable broth
1tablespoonsoy sauce
2ouncescream cheesecut into small pieces
12-16ouncesgnocchiuncooked
6ouncesGruyère cheese or Swiss cheeseshredded
Fresh chopped parsleyfor garnish
Instructions
To a large oven-safe, heavy-bottomed skillet over medium heat, add olive oil and butter. Once the butter has melted, add the sliced onions. Sauté for about 30 minutes, stirring frequently, until the onions are very tender and have a deep caramel color.
Add salt, black pepper, and garlic powder. Stir to combine.
Add the broth and soy sauce and stir to combine, and bring to a boil. Reduce heat to low, and bring to a simmer, then add the cream cheese pieces and gnocchi. Simmer for about 3-5 minutes, stirring occasionally, until the cream cheese is melted in and the gnocchi are tender and cooked through.
Sprinkle the shredded Gruyere cheese evenly over the top. Place the skillet under the broiler and broil for 2-3 minutes, or until the cheese is melted and lightly browned.
Remove from the oven. Garnish with parsley.
Notes
Pre-packaged skillet potato gnocchi is my choice for so many dishes. You’ll find it in the fresh pasta area of well-stocked grocery stores. Other shelf stable or refrigerated gnocchi can be used, but may require additional cooking time. Check the package directions to make sure. Any leftovers can be refrigerated in an airtight container for up to 4 days. Reheat in the microwave or on the stove.
