Fresh, sweet pineapple mingles with healthy blueberries all covered in a honey lime dressing. So yummy and so healthy. It’s the perfect summer treat. Or, any season for that matter!
Cut the top off of the pineapple (save the top for a pretty presentation if you want). Position the pineapple corer over the core of the pineapple, and rotate the blades down toward the bottom of the pineapple. You don’t even have to cut the sides off of the pineapple or anything!
Once you’re near the bottom of the pineapple, give the corer a wiggle to break the pineapple rigs off, and slide the corer up. Break or cut the core of the pineapple from the bottom of the pineapple bowl.
Take the top black plastic part off of the corer, and slide the rings off the center. Slice the pineapple rings into chunks and place in a large bowl. Toss in a large handful of blueberries, and mix gently.
In a separate small bowl, stir together the juice of 1 lime with 1 tablespoon honey until well mixed.
Pour the honey-lime dressing over the fruit in the bowl, and gently toss to mix. Spoon the fruit salad into the pineapple bowl, and drizzle over any remaining liquid. Garnish with lime zest if desired.
