Cottage Cheese does it again with this Strawberry Almond Cottage Cheese Pudding, and I know you guys love these cottage cheese desserts. Sweet, creamy, good source of protein, and easy to make. This one reminds me of a soft cheesecake flavored yogurt.
Place almond paste in a food processor, and process until it’s very finely ground. Add cottage cheese and powdered sugar; process until blended. Add strawberries and almond extract; process just until blended. Cover and chill at least 1 hour to allow the flavors to meld, the pudding to thicken, and the almond paste to soften.
Notes
Cottage cheese pudding will be a little lumpy at first from the almond paste. That will soften as it sits. It also has a soft texture, like yogurt. I like to leave the strawberries a little chunky so you can see them, but if you prefer smoother, just blend longer in the food processor.Store in an airtight container in the fridge for up to a week.
