Smoky chipotle pepper in adobo sauce mingles with just the right amount of sweetness from the maple syrup all mixed into earthy sweet potatoes for a full flavored savory side dish that’s welcome at any holiday gathering or Monday night dinner!
Place chopped sweet potato in a large pot, and cover with cool water; bring to a boil. Reduce heat, and simmer 15 minutes or until tender when pierced with a fork; drain well, and place the drained potatoes in a large bowl.
While the sweet potatoes cook, mix the remaining ingredients (maple syrup through black pepper) together in a small bowl. Set aside until sweet potatoes are cooked.
Mash the sweet potatoes using a potato ricer, a potato masher, a hand mixer, immersion blender, or stand mixer. Add the maple syrup mixture to the mashed sweet potatoes, and stir until smooth and well combined.
Notes
Two pounds of sweet potatoes will be about two large sweet potatoes.
