This Cottage Cheese Bread has gone viral for good reason! It’s low carb, high protein, gluten free, low calorie, and so delicious! It has a great texture and tastes fantastic! You can also customize the flavors.
Place the cottage cheese in a fine mesh strainer, and allow liquid to drain off if the cottage cheese is liquidy.
Place the cottage cheese, eggs, and seasonings in a food processor or blender, and blend until well combined.
Spray a parchment paper lined baking sheet with non-stick cooking spray, pour the cottage cheese mixture onto the parchment paper, and spread it out evenly.
Bake in the oven for 30 to 40 minutes, until it’s golden brown. Remove from oven.
Place the baking sheet on a wire rack and let the bread cool in the pan for about 10 minutes. It will firm up as it cools.
Notes
If you have any leftovers, place the completely cooled bread in an air tight container and in the fridge for up to 3 days.For a longer storage, place it in a resealable freezer bag, and freeze for up to a month. To defrost, simply leave in the fridge overnight.
