How to make
This viral TikTok recipe is quick and easy with just the 2 main ingredients and some spices for flavor. Scroll down to the recipe card for full instructions and ingredient amounts.
All you need to do is throw the ingredients into a blender to make this ridiculously simple cottage cheese flatbread.
Pro tip: I like using full-fat cottage cheese in this recipe for the best taste and texture. You can also use 2% cottage cheese if you prefer, but avoid low fat cottage cheese for this recipe.
And, if your cottage cheese is liquidy, be sure to drain off the excess liquid by placing the cottage cheese in a fine mesh strainer. If the cottage cheese is too thin, the flatbread may be soggy and stick to the pan.
Then, pour it out onto a parchment paper lined rimmed baking sheet that’s been sprayed with oil or non-stick cooking spray, and bake it up.
Be sure to grease the parchment paper lined baking sheet very well with olive oil, cooking spray, or butter before pouring in the ingredients. And be sure to use parchment paper and not wax paper. Also, in all my testing of recipes, Reynold’s works best for any use.
After baking, remove it from the oven and let it cool on the baking sheet where it’ll continue to firm up. Then slice it into servings. I like to slice it using a pizza cutter – makes quick work of slicing.
How to store
If you have any leftovers, place the completely cooled bread in an air tight container and in the fridge for up to 3 days.
For a longer storage, place it in a resealable freezer bag, and freeze for up to a month. To defrost, simply leave in the fridge overnight.
Can this be made ahead?
This bread is great for meal prep, and perfect to make ahead.
Store it in the fridge in a large ziptop bag, or tightly wrapped in plastic wrap. If you have more than one sheet of flatbread, you’ll want to place parchment paper between the sheets so they don’t stick together.
It can be reheated in a pan over medium heat, pop it back in the oven for a few minutes, or reheat in the air fryer.
What is the texture like?
This light and airy bread has crispy crust edges with a slightly chewy interior. And it’s perfect for wrapping sandwiches.
What does it taste like?
The bread is nice and mild, which makes it perfect as a base for just about anything. It’s slightly cheesy and salty with a hint of garlic.
I have seen many people ask if it’s eggy, and I did not find it to be eggy at all. Just a nice light bread.
Does it taste like bread?
Well, no, it isn’t exactly like traditional bread. I would say that it’s a great bread alternative, but you aren’t going to fool anyone into thinking it’s bread.
Even carb loving husbands think it’s great. So, it passes the flavor and texture test.
Changes to the recipe
I like that this recipe is customizable too! Add as little or as much spice as you like to make it your own!
Swap the herbs spices up too. Try other dried herbs like basil, Italian seasoning, thyme, or everything but the bagel seasoning.
Try adding in some shredded cheddar cheese or Parmesan. This reminds me of my Garlic and Herb Cheese Sticks recipe.
Sprinkle in some crushed red pepper flakes or black pepper for a spicy kick. Or, add a squirt of Sriracha to the batter.
Play around with flavored cottage cheese as well. One with chives and garlic already added would be great. And, though I haven’t tried it, I bet that Pineapple Cottage Cheese would make a fun bread – maybe you could use it for a teriyaki chicken sandwich.
I do recommend not adding additional salt or the bread may be too salty, as cottage cheese tends to be a saltier cheese to begin with.
How to use it
This bread is so versatile.
Use it as a sandwich wrap, filling it with your favorite sandwich goodies like chicken salad, tuna salad, and hummus.
Go with a classic sandwich with mayo, tomato, lettuce, avocado, and deli meats. I made mine in some of the pictures into a BLT (and used mushroom bacon).
Make it into pizza. Smear it with some pizza sauce, top with cheese, and your choice of pizza toppings.
Serve it as the bread at a meal. Soup and bread, anyone? Tomato Parmesan Soup with a side of bread would be a perfect dinner.
Slice it up into smaller pieces and serve it as a nice appetizer as well. I like to slice it with a pizza cutter.

Cottage Cheese Bread
Ingredients
- 1 cup full-fat cottage cheese excess liquid drained
- 2 whole eggs
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon black pepper
- pinch of salt
Instructions
- Preheat oven to 350° F.
- Place the cottage cheese in a fine mesh strainer, and allow liquid to drain off if the cottage cheese is liquidy.
- Place the cottage cheese, eggs, and seasonings in a food processor or blender, and blend until well combined.
- Spray a parchment paper lined baking sheet with non-stick cooking spray, pour the cottage cheese mixture onto the parchment paper, and spread it out evenly.
- Bake in the oven for 30 to 40 minutes, until it’s golden brown. Remove from oven.
- Place the baking sheet on a wire rack and let the bread cool in the pan for about 10 minutes. It will firm up as it cools.

I liked the taste of this bread, but it was more like the texture of a custard than bread. I think I’d like to add just a tablespoon of flour to it and see if can be a little more bread like that way. Have you tried to make it more like the texture of a naun bread or not?
