Nutella Cottage Cheese Pudding

Nutella Cottage Cheese Pudding has just 4 ingredients and comes together in a snap! It’s based on my delicious Cottage Cheese Chocolate Pudding, but this recipe has the flavors of hazelnuts and chocolate in a rich creamy dessert with no guilt, low sugar, and lots of protein.

I really can’t get enough of this delicious dessert! And if you like cottage cheese, you seriously have to try it. It’s so good.

Cottage cheese soars in popularity

Cottage Cheese is really having its day in the spotlight, isn’t it!

And, of course, everyone loves Nutella with its smooth hazelnut and chocolate flavors.

These whipped cottage cheese recipes are all over the internet. And for good reason!

I mean, l they’re so delicious. They take just minutes to prepare. This one is a no bake and no cook recipe.

And it’s a healthy dessert that’s actually good for you and tastes delicious! Did I mention how good it tastes?

It’s only about 275 calories per serving.

You could even call this no bake Nutella cheesecake pudding.

Notes about the cottage cheese

For the cottage cheese, use fat free, low fat, or full fat – your choice.

Obviously, fat free will have fewer calories, but it also tends to be a bit more watery and less flavorful. Full fat will make a thicker and more flavorful food, but will add more calories to your snack. So, it’s your choice.

I usually use Lucerne full fat large curd cottage cheese. I find the flavor is always good, and the texture is great. Recently I bought a different brand of cottage cheese because I was shopping at a different store that didn’t carry Lucerne.

If you start with a thin watery cottage cheese, the end product will be thinner. Now, in the case of a pudding it may not be a problem to have a thinner treat. But, if you’re using cottage cheese in a baked good, the extra water can have an effect.

If your cottage cheese is very thin and watery, place it in a strainer lined with cheesecloth or a coffee filter over a bowl and refrigerate overnight to drain off excess whey.

I wanted you to be able to see the difference in the two different brands I bought. The Lucerne, on the left, is much thicker, and what I recommend for my cottage cheese recipes.

How to make

You can eat this for breakfast, as a light snack, or as a healthy dessert treat that will satisfy your chocolate cravings without all the unwanted calories.

Grab all 4 of your ingredients. For the cottage cheese and the cream cheese, feel free to use whole fat, low fat, or non-fat versions as you see fit. Full fat will be richer, thicker, and creamier. Lower fat will be thinner but fewer calories.

Combine all ingredients in food processor or blender, and blend until very smooth, scraping down the sides once or twice.

I find the food processor easier to use for this pudding. And, you can get all of the mixture out when it’s done. But either will work.

Blend on high until it’s creamy and smooth; it doesn’t have to be completely lump free.

Spoon half of the mixture, or about 1/3 cup pudding into each of 2 serving dishes.

For a thicker pudding, leave them in the fridge for a few hours or overnight to allow it to set more.

Keep it in the fridge, covered, for up to 5 days.

Flavor variation ideas

I’ve experimented with this dessert and different flavors.

It’s great with 1/4 cup peanut butter instead of the Nutella. I like to add a spoonful of berry jam or some fresh fruit for a PB&J kind of flavor.

It’s also great with 1/4 cup salted caramel sauce instead of the Nutella for a Salted Caramel Cottage Cheese Pudding. I like to sprinkle a little salt, especially {affiliate link} Fleur de Sel, on top of the puddings. Use a good quality salted caramel sauce, especially a homemade one. You could even drizzle a little more caramel over the top for serving.

Ingredients
  

  • ¼ cup Nutella
  • ½ cup cottage cheese
  • 1 ounce cream cheese at room temperature
  • ¼ teaspoon vanilla extract

Instructions
 

  • Combine all ingredients in food processor or blender, and blend until very smooth, scraping down the sides once or twice.
  • Divide pudding between 2 serving dishes, about 1/3 cup each.
  • Pudding will thicken as it sits in the fridge.

Notes

For the Salted Caramel Cottage Cheese Pudding: swap in 1/4 cup good quality salted caramel sauce instead of the Nutella. Sprinkle tops of pudding with Sea Salt.
