This Whipped Basil Ricotta Dip is an easy no cook appetizer made with creamy ricotta, fresh basil, and simple flavorful seasonings. Everything comes together in a food processor in about 5 minutes, making this a great last-minute dip for parties, snacking, or casual entertaining.

I love this kind of appetizer for game day, it’s healthy, fresh, not heavy, and can be made ahead and served cold. It reminds me of the flavors of lasagna or Caprese, and those are always right at home on game day!

It may appeal to your female party goers. Women are a big portion of the NFL audience, so don’t forget about us!

For a football game-day party, this Whipped Ricotta Dip is a great option for guests who want something fresh and lighter alongside the usual wings, nachos, and heavier game-day snacks. It’s creamy and flavorful without being overly rich, and the protein from ricotta makes it a satisfying choice.

And, you know, this dip is just as happy at a fancy holiday party like Christmas or New Year’s eve or at a nice dinner party. And, it’s budget friendly!

Health benefits

This simple appetizer provides a good amount of protein from whole-milk ricotta cheese. Protein helps support muscle maintenance and repair and can also help you feel satisfied between meals. Ricotta also provides calcium, which supports strong bones and teeth.

Fresh basil adds flavor along with small amounts of vitamins, minerals, and antioxidants, while extra-virgin olive oil contributes heart-healthy monounsaturated fats. Pair the dip with fresh vegetables or whole-grain crackers for added fiber and nutrients, or spread it on whole-grain toast for a more filling snack or light meal.

Cooking Tips

For the best and creamiest texture, use whole-milk ricotta. Whipping ricotta transforms it into a silky, creamy spread with a smooth texture. If you’re not a fan of the slightly grainy texture of ricotta in its original form, give this whipped ricotta recipe a try. You may never look at ricotta the same way again.

If your ricotta is particularly wet, drain off excess liquid before blending. This helps prevent a loose dip.

To drain it, line a fine-mesh sieve with cheese cloth, and place the ricotta in. Let the ricotta drain for about 10-20 minutes.

Basically, you’ll just need to put all the ingredients in a food processor, and blend for a couple of minutes. That’s it!

Pro Tip: For an especially smooth dip, process the ricotta for the full 1 to 2 minutes and scrape down the sides of the food processor as needed.

Can I use low-fat ricotta instead of whole-milk ricotta?

Yes, but whole-milk ricotta will give you the creamiest, richest texture. Low-fat ricotta may produce a slightly less creamy and flavorful dip.

Can I use another cheese instead of ricotta?

Yes, you can use other cheeses, although the texture and flavor will change. Whipped feta, cottage cheese (great for high protein), cream cheese (or neufchâtel cheese), goat cheese, or mascarpone will all work. And, I think queso fresco might be fantastic whipped, but I haven’t tried it yet.

What if I don’t have a food processor?

You can still make this. Just whip the ricotta with a hand mixer or stand mixer on medium speed until it’s smooth and creamy, about 2–3 minutes. You can also whisk it by hand, it just takes a little more effort.

What can I serve with ricotta dip?

This whipped ricotta dip is very versatile and can be served in several ways. I think the recipe’s usefulness shines here!

For an easy appetizer, spoon it into a shallow bowl, drizzle with olive oil, and add your favorite toppings. Hot honey gives it a sweet-and-spicy contrast, while tomatoes add freshness and acidity; try it with roasted cherry tomatoes. Chili garlic oil adds extra heat.

More ideas for toppings: fresh arugula, raw cherry tomatoes, sun dried tomatoes, chopped roasted red peppers, diced avocado, pesto, or chopped pistachios.

Sweet twist: Top it with oven roasted strawberries, cherry lime jam, or peach butter.

Serve it with crusty bread, toasted sourdough, crostini, crackers, pita, pita chips, or fresh vegetables such as cucumbers, carrots, bell peppers, celery, and cherry tomatoes.

It also makes a great spread for toast and sandwiches.

For a simple snack or light lunch, spread the ricotta onto toasted sourdough and top with fresh tomatoes, avocado, or a drizzle of olive oil.

Add a squeeze of lemon juice if you want a more acidic flavor.

  • Crusty bread: Serve with sliced baguette or rustic Italian bread.
  • Toasted sourdough: Spread the ricotta on toast and top with tomatoes or avocado.
  • Crackers: Great for an easy appetizer platter.

Storage and make-ahead

Can I make whipped basil ricotta dip ahead of time?

Yes. I wouldn’t make it more than 24 hours ahead, since the fresh basil can lose some of its bright flavor and the ricotta may release a little liquid as it sits.

The dip can be made ahead, but wait to add fresh basil garnish and other toppings until just before serving. Make the dip up to 1 day ahead and refrigerate it in an airtight container in the refrigerator until you’re ready to serve.

Let it sit at room temperature for 10–15 minutes before serving, then stir and add the toppings for the freshest presentation.

How to store leftovers?

Transfer leftover ricotta dip to an airtight container and refrigerate for up to 3 days. Stir before serving, as some separation may occur during refrigeration.

For the best texture and flavor, let the dip sit at room temperature for about 10–15 minutes before serving. Add more fresh toppings just before serving if desired.

Freezing is not recommended, as ricotta can become grainy and watery after thawing.

Ingredients
  

  • 1 cup whole-milk ricotta cheese
  • 1 tablespoon extra-virgin olive oil plus more for drizzling
  • ½ cup loosely packed fresh basil leaves plus more for garnish
  • Pinch sea salt
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground black pepper
  • ⅛ teaspoon crushed red pepper flakes

Instructions
 

  • Add the ricotta, olive oil, basil, salt, garlic powder, black pepper, and red pepper flakes to a food processor. Process for 1 to 2 minutes, scraping down the sides as needed, until the ricotta is smooth, creamy, and well blended. Taste the dip and add more salt, if desired.
  • Spoon the whipped ricotta into a shallow serving bowl. Use the back of a spoon to create swirls in the surface. Drizzle with olive oil and add your choice of toppings.

Notes

Recipe should yield about 1½ cups or 6 servings if served as an appetizer.
Use whole-milk ricotta for the creamiest texture. For a smoother dip, make sure to process for the full 1 to 2 minutes.
Drain excess liquid from very wet ricotta before blending.
