It’s time for another Island Trollers recipe. This is one that I’ve been thinking about since I started writing recipes for them. I thought a nice creamy sauce with the heat of a habanero tuna would be so awesome. And, boy, did this recipe deliver! Tasty, creamy, pretty easy too.
Smoky chipotle chilies, smoked paprika, and toasted cumin seeds combine with earthy black beans and tangy tomatillos in this soupy chili to make a tasty and complex (but not too hot) dinner. And, it’s super easy on the cook because it’s made in the crock pot.

This Tomatillo Sauce is Chunky & Colorful. Really pretty. Tangy, and a little sweet because the shallot and garlic are roasted.
I’m working on my fish taco recipe, what with Cinco de Mayo coming up (on Thursday, May 5th this year 2011) and World Oceans Day on June 8th. And, one of the salsas I’d like to serve with my tilapia tacos is a nice tangy tomatillo salsa.
