This is a “use it or lose it week” in my house. Which means that I’m not cookin’ up much new stuff, just using whatever’s in there.
Sometimes, inspiration comes from whatever is in the ‘fridge and needs to be used up.
Dinner… sometimes you have something in mind for dinner, but it just doesn’t work out. Maybe something went bad in the ‘fridge. Maybe you forgot to pick something up at the grocery store. Maybe someone in the house says they just don’t want that thing tonight.
This week is “Use It or Lose It Week” in our house. That means I try to use all the bits and pieces in the ‘fridge before they go bad. Last night, we had Summer Veggie Frittata. Yummy. Tonight will be orzo cooked in Parmesan broth with pine nuts and sautéed zucchini and red bell pepper. (As you guessed, I still have zucchini to use up).
