Last week I made my Smoky Black Bean Chili for dinner. It’s great because it cooks in the crock pot, leaving the kitchen nice and cool. Since it makes a big ‘ol pot of chili there were lots of leftovers that I stuck in the freezer. And, last night I made enchiladas with the chili, some more black beans, zucchini, and corn. Man, was it yummy!
I’ve been on a big Peruvian food kick around here lately, and this Vegetarian Gnocchi with Peruvian Seco Sauce is just awesome! This sauce is perfect! Rich and thick with a little kick of heat. Lots of veggies! And, Gnocchi, those little pillows of potato goodness.

This Mexican Casserole was a life-saver the other week. I didn’t have much time to make dinners or lunches, so I made this lovely big casserole, and we have several meals. A new avocado (to me), the Mexicola Avocado was delicious, smooth and buttery. And I served them with some awesome Baked Mexican Potato Skins. These potato skins have become a favorite in our house! I make them all the time because they’re so yummy & perfect for snacking on while watching football!
My Flamin’ Hot Sauce is full flavored and lightly sweet. It isn’t hot just for the sake of being hot. It’s smokey and rich with chipotle peppers. Be prepared to eat it on everything!
