About this coffee
- Cold Brew: Smooth, low-acid coffee steeped for 12 hours. Use your favorite brand (I really like Stok) from the store, or make your own. I have the homemade recipe in the recipe card. You can also use strong brewed coffee that’s been cooled.
- Vanilla Syrup: Adds sweetness to the coffee base. Use a brand like Portland Syrups or Torani. You can also make your own.
- Vanilla Sweet Cream Cold Foam: A blend of heavy cream, oat milk, and vanilla syrup. This cold foam is delicious on coffee, but don’t stop there. Try it on tea, like a nice cinnamon tea, chai, or London fog. Serve it on hot chocolate for a fancy drink.

How to make
This homemade Vanilla Sweet Cream Cold Brew is easy to customize. Use your favorite cold brew coffee and adjust the amount of vanilla syrup to your taste. If you like a creamier drink, add a little more vanilla sweet cream. For a lighter drink, use less.

The vanilla sweet cream can be made ahead and stored in the refrigerator, so you can have it ready whenever you want an iced coffee. I like using an immersion blender or milk frother to give the cream a light, foamy texture, but you can also whisk the cold foam by hand or use a blender. Want to read more about cold foam? Hop over to my How to Make Cold Foam tutorial.
If you’re making your own cold brew, medium-coarse coffee grounds work best. Finely ground coffee can make cold brew cloudy and more difficult to strain.
Letting the coffee steep overnight gives you a smooth, concentrated coffee that works especially well over ice.
Don’t skip the straining step. A coffee filter or cheesecloth helps remove the fine grounds for a smoother cold brew.
Adjust the sweetness. Different vanilla syrups vary in sweetness, so taste the coffee before adding more syrup.

Can I use store-bought cold brew?
Yes, store-bought refrigerated cold brew works perfectly in this recipe. Choose your favorite brand. I really like Stok un-sweet black with the green label. They also have a decaf which is nice. If you get a sweetened cold brew, be sure to adjust the vanilla syrup to taste.
Serving Suggestions
- Serve over plenty of ice for a cold, refreshing coffee.
- Add extra vanilla sweet cream for a richer drink.
- Use more oat milk for a slightly lighter, oat-flavored sweet cream.
- Add a sprinkle of cinnamon for a little extra flavor.
- Serve with breakfast pastries, muffins, coffee cake, or a simple breakfast.
- Make a batch of homemade cold brew and vanilla sweet cream ahead for easy iced coffees throughout the week.
Storage
Store homemade cold brew and vanilla sweet cream separately in airtight, food-safe containers, like a mason jar with these fitted lids in the refrigerator.
- Homemade cold brew: Use within about 1–2 weeks for best quality.
- Vanilla sweet cream: Use within about 5–7 days and discard if it develops an off smell, flavor, or appearance.
Do not leave the sweet cream at room temperature for extended periods.

Can I make vanilla sweet cream ahead of time?
Yes, the vanilla sweet cream can be made ahead and refrigerated in an airtight container. Give it a quick stir, shake, or froth before adding it to your cold brew.
