Healthy start to the year
I wanted to make some nice and healthy apple oatmeal muffins. About this time every year I work on my cholesterol. Take a look at my post from 2018 for Orange Blueberry Dried Fruit Compote where I talk about watching my cholesterol and I give tons of tips to help you.
A couple of my tried and true ingredients for lowering cholesterol are apples and oatmeal. So, why not combine them in a tasty little muffin!
An apple a day
You’ve heard the saying that an apple a day keeps the doctor away.
Apples lower your blood cholesterol and they protect your heart. The ingredient in apples that does a lot of the work is pectin. Pectin is a sticky substance found in fruits and veggies that works as a natural cholesterol cutter. It’s a soluble fiber that helps draw cholesterol out of the body.
Apples also contain flavonoids, which are chemicals that sort-of short circuit the process that makes “bad” LDL cholesterol accumulate in the bloodstream.
I’m sure you’ve seen the claims on the oatmeal boxes that it helps lower cholesterol.
Oats, like apples, contain lots of soluble fiber, the kind shown to reduce “bad” LDL cholesterol. Oats also may preserve good levels of “good” HDL cholesterol.
I like to use muffin cups for all my muffins, and I like to spray the inside of the cups with non-stick or oil spray so the muffin doesn’t stick to the cup.
I used unsweetened almond milk for this recipe. I like the flavor it adds and the fact that it’s healthy. Almonds are loaded with calcium, vitamin E (an antioxidant), and magnesium (which helps regulate blood pressure). Almonds are also high in monounsaturated fats, which may lower total and “bad” LDL cholesterol. You can, if you prefer to use another milk, swap it out.
You can swap ½ cup of whole-wheat flour for ½ cup of the all-purpose flour in these muffins.
You can also add in some nuts for crunch if you like. Try about ½ cup of chopped nuts; I’d suggest almonds or walnuts for these muffins.
Can I freeze these muffins?
Yes, these muffins, and really almost any muffins, will freeze and reheat really well.
When you’re ready to defrost them, thaw the muffins at room temperature, or place frozen muffins in the fridge the night before you want to eat them. Or heat the frozen muffins in a 350° F oven for about 10-15 minutes.

Apple Oatmeal Muffins Recipe
Apple Oatmeal Muffins
- 1 cup all-purpose or gluten free flour
- 1 cup old-fashioned oats
- ½ cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 large egg
- 1 cup almond milk
- ¼ cup light tasting oil of your choice like olive or grapeseed
- 1 teaspoon vanilla extract
- 1½ cup apples peeled cored & chopped (about 1½ medium apples)
- Additional oats for topping
- Preheat oven to 400° F. Spray a 12-count muffin tin with cooking spray or line with paper liners and spray the inside of the liners with cooking spray, and set aside.
- In a large bowl, combine flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, almond milk, oil, and vanilla.
- Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chopped apple, and divide evenly between the 12 muffin cups.
- Sprinkle about 1 teaspoon of old-fashioned oats over the top of each muffin. Bake for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
