It’s clean and complex. The arugula adds a slightly spicy, earthy note that pairs beautifully with the acidity of lime juice, while the balsamic vinegar brings depth and a faint richness that rounds everything out without being overpowering.

This drink is ideal for spring and summer gatherings, brunches, bridal showers, or anytime you want something refreshing but a little unexpected. I’d totally serve it for St. Patrick’s Day! It’s also incredibly easy to customize—adjust the sweetness, increase the citrus, or experiment with different vinegars for a slightly different twist.

Tips for the best Arugula Lime Mocktail

This drink blends gin, lime, arugula, and a touch of balsamic vinegar for a bright drink that’s a simple, elevated cocktail that home bartenders can easily recreate.

Non-alcoholic gin works especially well here, as it mimics the botanical complexity of traditional gin without the alcohol, making this a perfect mocktail option for entertaining. However, you can easily swap in your favorite gin if you prefer a cocktail version.

Gin: Use non-alcoholic or regular gin

Lime juice: Use fresh lime juice for the best flavor. Bottled juice dulls the flavor.

Simple syrup: Adjust the simple syrup amount to taste depending on preferred sweetness. And I have a quick recipe for you on the recipe card so you can make your own.

Don’t overdo the balsamic – even a few extra drops can overpower the drink. I highly recommend a good quality aged balsamic here. It’ll have a nice mellow flavor rather than a sharp bite.

Arugula: Baby arugula will have a milder flavor than older arugula. Double straining removes the arugula pulp for a smoother drink.

Shake hard: helps extract flavor from the arugula

Chill your glass: keeps the drink crisp longer

Serve it in a coupe glass option for an upscale presentation

How to make simple syrup

To make simple syrup, add 1 cup of granulated sugar and 1 cup of water in a saucepan. Heat over medium, stirring until fully dissolved. Cool completely and store in an airtight container in the refrigerator for up to 1 month.

This 1:1 ratio sweetener is perfect for mocktails, cocktails, coffee, and cakes.

Ingredients
  

  • 2 oz non-alcoholic gin or regular gin
  • ¾ oz fresh lime juice
  • ¾ oz simple syrup 1:1
  • 3 drops balsamic vinegar
  • 1 handful fresh arugula
  • Ice

Instructions
 

  • Add gin, fresh lime juice, simple syrup, balsamic vinegar, and arugula to a cocktail shaker. Fill the shaker with ice. Shake vigorously for 15–20 seconds until well chilled.
  • Double strain into a chilled rocks glass over fresh ice.
  • Garnish with a fresh lime wheel and a small sprig of arugula if desired.
