These Lemon Ginger Energy Bites are a powerhouse of flavor and nutrition, packed with naturally sweet Medjool dates, heart-healthy nuts, and anti-inflammatory ingredients like ginger, citrus zest, and chia seeds.

The combination of fresh lemon zest and mandarin orange zest gives these no-bake energy balls a bright, refreshing flavor that perfectly balances the warm spice of ginger and cardamom. Unlike many store-bought snacks, these Zesty Citrus Ginger Energy Bites are made with whole food ingredients and contain no refined sugars.

The texture of this Healthy Snack Recipe is soft, chewy, and slightly crunchy from the nuts and seeds, while the citrus coating adds a fresh pop that makes these stand out from typical energy bites.

Recipe tips

These vegan, dairy free, and gluten free No-Bake Lemon Ginger Protein Bites are quick and easy to make. I have some tips for you in the post, and be sure to scroll down for the full recipe in the printable recipe card.

Medjool dates are softer and have more flavor than regular dates, be sure to get Medjool.  Remove the pits and any hard stems from the dates.

The stickiness, size, and moisture content can vary in dates and affect the texture of the bites. If the mixture is too dry, add another date or two, or add in 1–2 teaspoons water or lemon juice.

If the mixture is too sticky, add 1–2 tablespoons oats.

Use a small cookie scoop for even sizing. Lightly your oil hands to prevent the mixture from sticking. And, you can chill the mixture for about 10 minutes if it’s too hard to roll them out.

Changes to the recipe

As always, I recommend trying the recipe as written for the first time, then changing it up. But these Anti-Inflammatory Lemon Ginger Energy Balls with Dates & Nuts are fun to make your own.

  • Swap walnuts for almonds or pecans
  • Add shredded coconut for extra texture
  • Use turmeric and a pinch of black pepper for an added anti-inflammatory boost
  • Add protein powder for a protein-rich snack
  • Make them more intense by doubling the lemon zest and the ground ginger
  • Sprinkle a couple pinches of salt over the top for a little more savory flavor

Ingredients
  

  • 2 tablespoons lemon zest from about 2 large lemons, divided use
  • 2 tablespoons mandarin orange zest from about 2 medium, divided
  • ½ teaspoon salt
  • 1 cup packed Medjool dates pitted
  • 1 tablespoon fresh lemon juice
  • ½ cup walnuts
  • ½ cup unsalted roasted cashews
  • ¼ cup chia seeds
  • ¼ cup old-fashioned oats
  • 2 tablespoons diced candied ginger
  • 1 ½ teaspoons ground ginger
  • ¼ teaspoon ground cardamom
  • 1 teaspoon olive oil

Instructions
 

  • In a small bowl, combine 1 tablespoon lemon zest and 1 tablespoon mandarin zest. Set aside.
  • Add remaining ingredients (including remaining zest) to a food processor. Pulse 10–15 times in 1-second intervals until the mixture is sticky and holds together when pinched. Scrape down sides as needed.
  • Scoop about ½ teaspoon (for small bites) or 1 tablespoon (for larger bites). Roll between palms into balls. I’s OK if they’re not all uniform.
  • Place bites on a parchment paper lined rimmed baking sheet. Sprinkle with reserved zest and gently shake to coat.
  • Enjoy immediately, refrigerate, or freeze.

Notes

Store them in the fridge up to 1 week or freezer for up to 3 months. They can be eaten straight from the freezer, and the flavor mellows the colder they are.
