Medjool dates are softer and have more flavor than regular dates, be sure to get Medjool. Remove the pits and any hard stems from the dates.
The stickiness, size, and moisture content can vary in dates and affect the texture of the bites. If the mixture is too dry, add another date or two, or add in 1–2 teaspoons water or lemon juice.
If the mixture is too sticky, add 1–2 tablespoons oats.

Use a small cookie scoop for even sizing. Lightly your oil hands to prevent the mixture from sticking. And, you can chill the mixture for about 10 minutes if it’s too hard to roll them out.
Changes to the recipe
As always, I recommend trying the recipe as written for the first time, then changing it up. But these Anti-Inflammatory Lemon Ginger Energy Balls with Dates & Nuts are fun to make your own.
- Swap walnuts for almonds or pecans

Lemon Ginger Energy Bites
Ingredients
- 2 tablespoons lemon zest from about 2 large lemons, divided use
- 2 tablespoons mandarin orange zest from about 2 medium, divided
- ½ teaspoon salt
- 1 cup packed Medjool dates pitted
- 1 tablespoon fresh lemon juice
- ½ cup walnuts
- ½ cup unsalted roasted cashews
- ¼ cup chia seeds
- ¼ cup old-fashioned oats
- 2 tablespoons diced candied ginger
- 1 ½ teaspoons ground ginger
- ¼ teaspoon ground cardamom
- 1 teaspoon olive oil
Instructions
- In a small bowl, combine 1 tablespoon lemon zest and 1 tablespoon mandarin zest. Set aside.
- Add remaining ingredients (including remaining zest) to a food processor. Pulse 10–15 times in 1-second intervals until the mixture is sticky and holds together when pinched. Scrape down sides as needed.
- Scoop about ½ teaspoon (for small bites) or 1 tablespoon (for larger bites). Roll between palms into balls. I’s OK if they’re not all uniform.
- Place bites on a parchment paper lined rimmed baking sheet. Sprinkle with reserved zest and gently shake to coat.
- Enjoy immediately, refrigerate, or freeze.
