Lavender Collins

This refreshing Lavender Collins is a citrusy modern twist on the classic Tom Collins. It’s made with lavender simple syrup, which adds a beautiful floral note, gin, lime juice, and a splash of club soda or sparkling water. It’s light, fragrant, and perfect for sipping. Use non-alcoholic gin for a great mocktail or your favorite spirit, from a crisp London dry gin to a more floral gin like Hendrick’s.

I’m taking the Classic Tom Collins Recipe and giving it an update. It’s perfect for the holidays with its balance of sweet, tart, and botanical flavors. Toast your friends or just yourself, serve it at family dinners, even bring some to the awkward office holiday party.

Recipe notes

I use zero proof gin in mine to keep the spirits bright all season long. Of course, if you prefer to use regular gin, you can. The NA gin also makes this drink perfect for Dry January or Dry February.

This recipe makes a single cocktail and works beautifully with either homemade lavender simple syrup or store-bought lavender simple syrup.

It’s easy to make by pouring the ingredients in the glass, giving it a stir, and topping with ice and sparkling water. The drink can also be shaken in a martini shaker if you prefer.

Mocktail trend

I went to BevMo the other day in search of some mocktail makings, and was pleasantly surprised at the selection they have. There were lots of N.A. beers, wines, mocktails, and spirits to choose from. So, I decided to get this alcohol free gin. I’m super impressed with it. And it’s so fun to have so many options now.

It’s been many years now since I’ve had any alcohol. I feel like I sleep better now, am healthier in general, and am not as lazy.

Is non-alcoholic gin actually no alcohol?

Yes, non-alcoholic gin is crafted much like traditional gin, but the alcohol is removed or never retained in the final product. Distillers begin with a mix of botanicals, often juniper berries, coriander, citrus peel, cardamom, and other aromatic herbs and spices to that create gin’s classic signature flavor.

Ingredients
  

  • 2 ounces gin Use non-alcoholic gin or your favorite spirit
  • ½ ounces lavender simple syrup
  • ½ ounces fresh lime juice
  • 4 ounces carbonated water or club soda
  • Garnish: lime twist and a sprig of culinary lavender

Instructions
 

  • Combine first three ingredients in a glass and stir gently to combine. Add ice, top up with carbonated water to taste. Serve in a rocks glass and garnish with a lime twist and a sprig of culinary lavender.

Notes

This recipe makes a single cocktail and works beautifully with either homemade lavender simple syrup or store-bought lavender simple syrup.
Feel free to adjust the amount of simple syrup to your preferred sweetness.
The drink can also be shaken in a martini shaker if you prefer.
