No Bake Peanut Butter Cookie Truffles

No Bake Peanut Butter Cookie Truffles are yummy little bundles of peanut goodness that are perfect for holiday parties and Christmas cookie exchanges.

These are one of my cookie recipes that you’ll absolutely love, along with Snickerdoodles and Oatmeal Cookies.

This Virtual Cookie Exchange an old-fashioned blog hop, where I make another blogger’s recipe. That blogger makes a recipe from someone, and if you clicked through all the way around all the bloggers, you would get back to my blog!

Our job this time around was to make a recipe from our secretly assigned blog, a recipe that would work on a holiday cookie or treat platter.

It could be anything from cookies, candy, bars, brownies, truffles, fudge, peanut clusters, chocolate-dipped stuff, well, you get it.

No-Bake Peanut Butter Cookie Truffles -- a delicious & easy recipe that's great for gift giving, cookie exchanges, Santa's cookie plate, or thinking farther ahead, great for Valentine's Day as well!
If you don’t want to dip all of the truffles, you can drizzle chocolate over them.

I’m really excited that I got PicNic.

PicNic is Nicole’s blog, where she shares great looking, easy to make recipes!

She says, “My recipes focus on easily obtainable ingredients and minimum fuss, helping to keep your time in the kitchen fun while allowing you to create delicious meals and treats for your loved ones.”

While looking around for cookie recipes I found several amazing looking ones! Her Mint Chocolate Cookies recipe sound so good! And these Oatmeal Chip Bars have me drooling!

Nicole describes these Peanut Butter Truffles as “sitting somewhere between a truffle and a cookie.” I could totally see that description.

These are super easy to make, and really amazingly delicious. I mean, how can you go wrong with sweetened condensed milk, butter, brown sugar, and peanut butter? You can’t!

We couldn’t stop eating these!

Recipe Notes

In her original recipe, she calls for digestive biscuits (or any plain biscuit).

I couldn’t find digestive biscuits at my grocery store, so I went with Biscoff.

Another great option would be Carr’s Whole Wheat Crackers (which I love to use for S’mores!), or shortbread cookies like Lorna Doone.

But, like she says, any plain biscuit or cookie will work.

The scoop I have is a 2-tablespoon scoop, which makes a nice large cookie treat.

We took some of the large balls and cut them in half, making more smaller cookie bites.

When the cookie bites were 2 tablespoons in size, we got 25 large balls. Cutting all of them in half got us 50 small balls.

So, depending on the size you make, there’s quite a range of servings from this recipe, which I really like!

If you’re making these to go in cookie gift boxes, or for a cookie exchange, you could make a bunch of smaller ones. If you’re making them for Santa, you might like to make larger ones.

To drizzle or not to drizzle?

As for dipping these cute little Cookie Truffles, I admit, I’m pretty lazy.

I did about half of the batch dipped in chocolate, and decided that I would just do a chocolate drizzle on the other half.

They are both really pretty, so either way you choose to present them works well. I do think they’d be pretty with a drizzle of both white and dark chocolate as well, or maybe dipped in dark chocolate and a white chocolate drizzle on top.

Pretty colored sprinkles would be lovely as well.

No Bake Peanut Butter Cookie Truffles

So easy to make & super delicious, these little no bake peanut better truffles will be a hit any time of year!

Ingredients
  

  • 1 can sweetened condensed milk about 400 g
  • 1 stick unsalted butter
  • ½ cup brown sugar
  • 8.8 ounce package Biscoff, digestive biscuits, or Carr’s Whole wheat crackers
  • ¾ cup peanut butter
  • ¼ cup chopped unsalted roasted peanuts , plus additional for garnish
  • 8 ounces milk, dark, or white chocolate, melted

Instructions
 

  • Process the biscuits to a fine crumb in a food processor. Set aside
  • Heat the sweetened condensed milk, butter, sugar, and peanut butter together in a saucepan over a medium heat until everything is well combined. Remove from heat, and add the crushed biscuits and the chopped peanuts. Mix well to combine.
  • Scoop mixture out into tablespoon-sized balls, and refrigerate until set, about 20 minutes.
  • Using your hands, roll the scoops into balls, and dip into the melted chocolate, or drizzle with chocolate if desired. Garnish with some chopped peanuts on top, and place back in the fridge to set the chocolate.
  • Store in an airtight container in the fridge.

    Oh my goodness! You really just brought back great memories! My mom used to make a similar recipe every year and she’d store them in mason jars in the fridge. I need to make them! I dont know why she doesn’t make them anymore haha!

    I love the drizzle option so you can see what is inside, but even dipped completely in chocolate I would have no problem diving into these truffles. Peanut butter and chocolate together are an amazing combination!

    I want to make them as soon as I can… I love peanut butter together with chocolate…I just want to know in grams the ingredients..here in Greece we don’t know ounces..thank you

    Maria, in grams, the recipe looks like this:
    400 g can condensed milk
    100 g butter
    1/2 cup brown sugar
    250 g digestive biscuits (or any plain biscuit)
    3/4 cup peanut butter
    1/4 cup chopped peanuts
    200 g milk, dark, or white chocolate
    Hope that helps.

    I love the idea of these. I am in the middle of making them. They are way to runny to form an all. I followed the recipe to a t. Not sure what to do. Maybe add more cookies. Luckily I bought two bags of them.

    Tamara, that is odd. I’ve made these a few times and never had a problem. Yes, I’d say probably add more crushed cookies until they reach a better consistency. Take a look at the video for the consistency that we got. I bet they’ll still be yummy anyway.
