Pumpkin Butter Pie Bites

These Pumpkin Butter Pie Bites are a quick little cookie treat that I came up with to use some of that Pumpkin Butter that I posted recently.

These taste just like little pumpkin pies, but without any work. Then, top them with a little whipped cream, and you’re all set for a great easy cookie that you can take to a potluck or holiday party.

Pumpkin butter

Every year when I was growing up my family went to a pick your own apples and pumpkins farm.

In fact, it there were lots of farms in the area, and it was so much fun to see and smell all the fall sensations.

Fall is my favorite time of year

All those colors in the trees. The cool crisp mornings. Sweaters. It’s so nice to have fall as a season. I just love it.

And it’s always been a favorite of mine to go to the pumpkin patch and pick out a pumpkin or two.

But, I digress. The apple farm sold apple butter and pumpkin butter in little jars, and my mom always bought one. So I grew up enjoying apple butter and pumpkin butter.

How do you use pumpkin butter?

I have found that many people don’t know what to do with these fruit butters.

Besides spreading it on your morning toast or spooning it into oatmeal or topping yogurt or ice cream with fruit butter, there are many fun recipes to work with. I’ve gathered up a bunch for you from some of my blogger friends.

I’m often asked how to use pumpkin butter or apple butter.

Recipe notes

I made these cookie bites with store-bought cookies. They will work with any brand you like. I like the shape of these sticks for mine. But, round cookies or sticks or triangles, any shape will work well.

Even shortbread cookies with added pecans would be lovely for these quick party cookies. Then you could call them pecan & pumpkin pie bites.

What kind of shortbread cookie should I use?

Can these be made ahead of time?

I made a bunch of these little pumpkin cookie bites, more than I could have eaten in one sitting. So, I placed the leftovers in the fridge, and I was very happy with how long they lasted in there.

The cookies didn’t get soggy at all.

So, yes, these can be made ahead. Add the whipped cream right before serving though, because the whipped cream will melt.

I think they worked really well too because my pumpkin butter isn’t watery at all, and my cookies were nice and thick. So do try to get thick cookies if you’re making these ahead of time.

These easy to make and fun Pumpkin Butter Pie Bites taste just like little pumpkin pies, but without any work.

Ingredients
  

  • Pumpkin Butter
  • Shortbread cookies
  • Whipped cream

Instructions
 

  • Place the pumpkin butter in a ziptop bag or in a piping bag. Trim a corner of the ziptop bag off to create a piping bag.
  • Pipe the pumpkin butter onto the shortbread cookies. You can cover he whole cookie or simply cover the edge of them.
  • Place a small dollop of whipped cream on top of the pumpkin butter.
