Quick bread tips
And, try this bread toasted for your morning breakfast. Toasting it really brings out the rich orange flavor.
I love quick breads. They’re so universally loved. This bread loaf will help you use up some of that marmalade in the fridge too.
Great for breakfast with a lovely cup of coffee, as a light dessert in the evening, or even a nice mid-day snack with a cup of tea.
This bread loaf recipe makes a great homemade gift to give to family, friends, and neighbors. Everyone will love it. It also makes a nice housewarming gift.

Store-bought or homemade marmalade
This Orange Marmalade Bread can easily be made with a store-bought orange marmalade.
Buy a nice good quality jar of marmalade if you go this route. Avoid those more ones that are more like jelly, just sugar and water, and instead choose one that’s fruit preserves filled with some nice chunky orange bits.

Make your own marmalade

Recipe notes
The recipe calls for vegetable oil, really any oil that’s light in flavor will work here. Light olive oil, canola oil, grapeseed oil, or vegetable oil will all be great.
Whole wheat flour
I store my whole wheat flour in my refrigerator so it will keep longer. I highly recommend that you do as well.
If you open your whole wheat flour and it smells off or metallic-y, it’s probably gone bad, as whole wheat will go rancid rather quickly if stored at room temperature. Be sure to give it the sniff test before using it.

Recipe

Orange Marmalade Bread with Maple Icing
Ingredients
Bread:
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 egg whites
- 2 tablespoons sugar
- 2 tablespoons vegetable oil
- ¼ cup orange marmalade
- 1 cup fresh orange juice from about 3 oranges
- 1 teaspoon vanilla extract
- ½ teaspoon orange extract
Icing:
- 1 cup powdered sugar
- 1 ½ tablespoons milk
- 1 tablespoon pure maple syrup
Instructions
- Preheat oven to 350 º F.
- Lightly spray a 4×8-inch loaf pan with non-stick spray. Set aside.
- In a large bowl, combine dry ingredients: both flours, baking powder, baking soda, cinnamon, and salt. Mix well.
- In a smaller bowl, combine remaining bread ingredients (egg whites through orange extract). Beat with a fork or whisk until well combined. Add wet ingredients to dry ingredients, mixing until all ingredients are moistened. Pour into prepared pan.
- Bake 30-35 minutes, or until a wooden toothpick inserted in the center of the bread comes out clean.
- Cool in pan 5 minutes, then transfer to a rack to finish cooling.
- Make maple icing:
- Mix powdered sugar, milk, and maple syrup together until smooth.
- Drizzle over cooled bread, or pour over the top, using as much or as little as you like.

This would have been perfect for our trip to Alaska! It would have been very handy as a carry on on the plane for under my seat to easily get to and find things I wanted/needed during the long flights. It would have also been ideal for every time we left the cruise ship at each different port for our adventures in the various places.
Also, we have a trip to NYC coming up end of May and it would be ideal on the plane AND walking around the city too!
