Island Trollers Tuna Cake Sandwiches on Toasted Parmesan Sourdough
You may remember my Tuna Cakes. I do! I remember them fondly (drool drool!). Made with yummy and super fresh Island Trollers Albacore Tuna. Their tuna is amazing, and as they state on their website, “Each fish is caught one at a time in the beautiful waters of the North Pacific. We are proud to be involved in this sustainable fishery off the West Coast of the United States. Each can is raw packed and cooked only once. This is sashimi grade albacore in a can, the finest you will find anywhere in the world!”
Ah, I simply adore them!
Well, I was fondly remembering those Tuna Cakes the other day, and it hit me… a sandwich made with Tuna Cakes. Perfect! Now, this is no ordinary sammie. This is a messy, full flavored, savory, filled with goodness, tasty treat! I mean a finger licking cheesy Parmesan sammie filled with sustainable tuna! Yep, that’s a perfect lunch! But be sure to have a napkin next to you!
I loaded my sammies up with fresh spinach leaves, tomato slices, and red onion. I don’t think they need any mayo because the bread is already Parmesan toasted. But, feel free to load up whatever you like on your sammie: lettuce, grilled onion, shredded carrots, whatever makes you happy.
As a reminder, if you’re making these recipes with Island Trollers Tuna you don’t want to drain off those tasty juices from the can; they are the juices from the fish itself, not just plain ol’ water or oil. Those juices are loaded with Omega 3s. So, it might feel a little weird not to drain the tuna, but don’t do it.
I’m particularly fond of the Alder Smoked for these Tuna Cakes; the garlic or capers would also be fantastic. But I’ve found that all their flavors are super yummy and pretty interchangeable in any of my recipes.

Island Trollers Tuna Cake Sandwiches on Toasted Parmesan Sourdough Recipe
Tuna Cakes Sandwiches with Parmesan Toasted Sourdough
- 1 recipe tuna cakes recipe here: https://lifecurrentsblog.com/tuna-cakes/
- about 1/3 – ½ cup freshly grated Parmesan cheese
- salted butter at room temperature or spreadable butter enough for a light smear
- 4 slices sourdough bread
- Fresh spinach
- Tomato slices
- Thinly sliced red onion
- Toppings of your choice
- Make the tuna cakes and let them rest in the fridge.
- Towards the end of the resting time for the Tuna Cakes, start prepping the Parmesan Toasted Sourdough. Grate the Parmesan onto a plate. Lightly spread butter on one side of each slice of Sourdough bread. Press buttered side of bread onto grated Parmesan.
- Heat a large skillet, preferably a well-seasoned iron skillet, over medium heat. Place Parmesan sourdough cheese side down in skillet and cook until cheese has melted and turned golden brown. Place Parmesan sourdough cheese side up on a plate, and continue cooking all slices of bread in this manner.
- Once bread has all been toasted, wipe out skillet, and heat 1 tablespoon oil in the same skillet set over medium heat. Once oil is hot, carefully place the patties one at a time in the pan, being careful not to overcrowd the pan. Cook patties until they are golden brown on the first side, about 3 to 5 minutes. Carefully flip cakes and fry on other side until golden brown, about 4 minutes. Remove the cakes from the pan once they’re golden brown on each side, and place cooked Tuna Cake on toasted Sourdough bread. Fry up additional patties, adding oil between each, as necessary.
- Garnish sandwiches with desired toppings, such as fresh spinach, tomato slices, and red onion slices. Devour!
