recipe inspiration

So there you are with a jar of homemade Easy Enchilada Sauce in your fridge.

And, there are those flatbreads that you bought over on the counter.

And, well, you might be feeling adventurous, and that’s how *this Mexican Flatbread* happened.

Menu planning

But, let me back up a bit.

One thing I’m asked about all the time is how to do menu planning (or more like leftover planning).

How do you use everything that you bought, when clearly, one recipe won’t use up everything in the box/package/bag/whatever.

Take for instance, the bag of flatbreads that I bought to make individual pizzas for company this weekend.

Each person had one flatbread to eat, but I bought 2 for each person in case they were hungry. So, I was left with a bunch of extra ones.

Now, my husband would be happy to have the leftover flatbreads as regular pepperoni pizzas every night. But, me, well, let’s just say that he loves pizza more than I do.

And, I recently won a whole box full of California avocados. So, I’m joking right now that everything I make this week is going to have avocados on it.

These leftover items are where a little bit of creativity, a bit of luck, and an adventurous spirit in the kitchen help with some menu planning.

My first thought was to just put avocado on a pizza. Then, as I thought more about it, I realized that a Mexican Flatbread Pizza could be amazing.

Spread the flatbread with some Easy Enchilada Sauce, throw on some Mexican toppings (and avocado!), and you’ve got yourself a delicious Mexican Pizza.

Updates to the classic

And, let me tell you, these bad boys are awesome!

I love the Easy Enchilada Sauce as the pizza sauce. It’s rich and thick, but with a Mexican twist!

The flatbreads can be homemade or store-bought. We’ve used Naan, pita, or ones just called Flatbreads. Try these Cottage Cheese Flatbreads.

Boboli would also work well if you’re going the store-bought route.

And, it makes are really quick dinner if you do go with some store-bought bread!

your choice of toppings

Feel free to use your favorite toppings. Or, vary it every time you make it!

Mexican toppings can include black beans, thinly sliced red onions, black olives, spinach, or zucchini. I’ve just given my suggestions as a tasty starting point.

I like the sweet corn with the savory Enchilada Sauce and the spicy Pepper Jack cheese, and all topped off with the creamy avocado.

You can buy jarred roasted peppers or roast your own peppers.

I often buy a couple extra peppers during the week, roast them, and keep them in the fridge so that I can easily chop them and throw a little extra veggie into dinner.

Make it a fun family dinner night and do a pizza bar where everyone gets to make their own!

Pro tips

Ingredients you’ll want to gather up:

  • Flatbread
  • Easy Enchilada Sauce
  • Shredded Pepper Jack cheese
  • Roasted red pepper
  • Corn, defrosted if frozen
  • Sliced Avocado
  • Chopped Green Onions

Preheat oven to 450 degrees F. If you have a pizza stone, preheat the pizza stone in the oven.

Spread the flatbread with a nice smear of Enchilada Sauce.

Top with a handful of Pepper Jack cheese.

Next, place your toppings on the cheese, not too many, or the pizza could get soggy.

Carefully place the flatbread pizza on the preheated pizza stone, or place the flatbread pizza on a cookie sheet and into the oven.

Bake at 450 degrees for 7-9 minutes, or until the cheese has turned golden brown and is bubbly.

Carefully remove from the oven.

Top with sliced avocado and green onions.

Slice as desired. For these flatbreads I simply cut in half so we had two nice big pieces.

More ideas for enchilada sauce

If you have more leftover enchilada sauce, there are tons of things that can be made with it.

Serve up some good old fashioned Red Chile Enchiladas, or try a new twist on enchiladas with Sweet Potato Black Bean Enchiladas.

    I just started buying and eating Naan bread, I fell in love with it. I used to ignore it before because I didn’t know how it would take like. It tasted good and i usually make a chicken sandwich using the flat bread.This pizza looks good but I am not sure about adding avocado on it. I love avocado but not on my pizza but maybe I am wrong. I will try and find out myself.
